Trim and Season

Trim excess silver skin and hard fat from the brisket point, leaving about 1/4-inch of fat for moisture. Pat the meat dry with paper towels. In a small bowl combine kosher salt, coarse black pepper, paprika, garlic powder, and onion powder. Evenly rub the spice mix all over the brisket point, covering all surfaces. Let rest at room temperature for 30 minutes or refrigerate up to overnight to deepen the cure.

Prepare Smoker

Preheat your smoker to 225°F (107°C). Add hickory or oak wood chunks per manufacturer instructions to produce a steady, clean smoke. Maintain temperature throughout the long cook.

Smoke the Brisket

Place the brisket point fat-side up on the smoker grates. Insert a probe thermometer in the thickest part without touching fat or bone. Smoke until internal temperature reaches about 195°F (90°C), roughly 5–7 hours depending on size and smoker. Monitor and adjust vents to maintain 225°F and replenish wood as needed.

Rest

Remove brisket from the smoker when it reaches 195°F and probe slides in like softened butter. Wrap the whole point in foil or butcher paper and let rest in a cooler or warm oven (off) for 45–60 minutes to redistribute juices.

Sauce and Finish

Cube and Render

Unwrap the rested brisket point and transfer to a cutting board. Cut the point into roughly 1 to 1 1/2-inch cubes, focusing on the most tender ends (these become the 'burnt ends'). Reserve any leaner trimmings for other uses. Place the cubes in an oven-safe pan or shallow foil tray, keeping bark pieces intact on as many cubes as possible.

Prepare Sauce

In a saucepan over medium heat combine beef broth, brown sugar, barbecue sauce, apple cider vinegar, Worcestershire sauce, butter, honey, and optional cayenne. Stir and bring to a gentle simmer until sugar dissolves and sauce thickens slightly, about 3–5 minutes. Taste and adjust for sweetness or acidity.

Toss and Braise

Pour enough sauce over the brisket cubes to coat them (reserve about 1/4 cup for glazing). Cover the pan tightly with foil. Return the pan to the smoker or place in a 300°F (150°C) oven. Braise for 1–1.5 hours until cubes are very tender and sauce is reduced and syrupy.

Caramelize and Finish

Remove foil and toss the cubes with the reserved sauce. Spread the cubes in a single layer and return to smoker (or oven) at 325–350°F (160–175°C) for 20–30 minutes, stirring once, until the sauce is sticky and caramelized and edges are darkened (watch carefully to avoid burning).

Service

Transfer burnt ends to a serving tray. Garnish with chopped fresh parsley and offer pickles or pickled onions on the side. Serve hot as a main or as an appetizer. Store leftovers in an airtight container refrigerated up to 4 days; reheat gently in oven or smoker until warmed through.
