Prepare cheese and pickles
Cut each cheddar slice in half lengthwise into 12 rectangular pieces (each slice yields 2 pieces). Cut each pickle spear into 2–3 shorter segments about 1–1.5 inches long to yield 12 pieces total.
Form bologna wraps
Lay one bologna slice flat on a clean board. Place one cheese rectangle and one pickle segment on the center of the bologna. Roll the bologna around the filling tightly so cheese and pickle are enclosed. Secure with a toothpick pushed through the center from top to bottom. Repeat for all 12 pieces.

Set up dredging station
Place the flour in a shallow bowl. In a second shallow bowl, whisk the eggs with the milk until smooth. In a third shallow bowl combine the breadcrumbs, grated Parmesan, smoked paprika, garlic powder, onion powder, kosher salt, and black pepper; stir to combine.
Coat the bologna rolls
Working with one roll at a time, lightly dust the rolled bologna in flour, shaking off excess. Dip into the egg wash, letting excess drip back into the bowl. Press into the breadcrumb mixture, coating all sides and gently compacting crumbs so they adhere. For a thicker crust, double-dip: return to the egg wash and then again to the breadcrumbs.
Heat oil
Pour about 1/2–1 cup oil into a heavy skillet (cast iron or stainless) — oil depth should be about 1/4 to 1/2 inch, just enough to shallow-fry. Heat over medium-high until shimmering and a small breadcrumb sizzles immediately (about 350°F / 175°C). If you have a thermometer, aim for 350°F; otherwise test with a breadcrumb.
Fry the bites
Carefully place 3–4 coated bologna bites into the hot oil, seam-side down. Don’t overcrowd. Fry 2–3 minutes per side until golden brown and crisp, turning once with tongs. Total frying time per piece ~4–6 minutes depending on heat and thickness. If the cheese starts to escape, reduce heat slightly. Transfer cooked bites to a wire rack set over a baking sheet or to a plate lined with paper towels to drain. Repeat with remaining pieces, adding more oil if needed and adjusting heat to maintain 330–350°F.
Finish and rest
Let the bites rest 2–3 minutes so cheese firms slightly. Trim toothpicks if needed before serving.
Dipping sauce (optional)
Whisk together mayonnaise, yellow mustard, honey, hot sauce (if using), lemon juice, and black pepper in a small bowl until smooth. Taste and adjust seasoning (add more honey for sweetness, more hot sauce for spice). Serve chilled or at room temperature alongside warm bologna bites.
