Protein (prep)

    Inspect and dry

    Remove giblets and neck from cavity. Rinse the bird(s) under cold water and pat thoroughly dry with paper towels. If using multiple chickens, process each the same way.

    If you brine, skip dry seasoning now; otherwise proceed to the Dry rub section.

    In a large nonreactive container or stockpot, combine 4000 ml cold water, 1.5 cups kosher salt, 1 cup packed brown sugar, 5 bay leaves, 2 tbs peppercorns, 6 smashed garlic cloves and 2 halved lemons. Stir until salt and sugar are mostly dissolved. Cool completely to room temperature, then chill if necessary.

    Submerge the turkey or chickens fully in the brine. Add ice (approx. 1 kg) to keep the brine cold if needed. Refrigerate or keep in a chilled cooler. Brine chickens 6–8 hours; brine a 10–12 lb turkey 10–12 hours (do not exceed 12–18 hours total).

    Remove bird(s) from brine, discard brine. Rinse thoroughly under cold water to remove excess salt from the surface. Pat very dry with paper towels and refrigerate uncovered for 1–3 hours if possible to further dry the skin (this helps crisp the skin).

Dry rub & seasoning

    Combine dry rub

    In a bowl, mix 0.5 cup packed brown sugar, 2 tbs smoked paprika, 1 tbs sweet paprika, 2 tbs kosher salt, 1 tbs ground black pepper, 1 tbs garlic powder, 1 tbs onion powder, 1 tsp dried thyme, and 0.5 tsp cayenne until uniform.

    Season the bird(s)

    Loosen the skin over the breast carefully with your fingers (especially for turkey) and rub a little of the dry rub directly onto the meat under the skin. Rub the remaining seasoning evenly over the entire exterior of the bird(s) and inside the cavity. For chickens, tie legs with kitchen twine for even cooking.

Glaze & basting

    Prepare glaze

    Whisk together 0.5 cup melted unsalted butter, 1 cup apple juice, 0.25 cup honey, 2 tbs apple cider vinegar, 1 tbs Worcestershire sauce, 1 tsp hot sauce (optional) and 0.5 tsp kosher salt until emulsified. Reserve about 1/3 cup for finishing.

    Keep glaze warm and stir before each baste. Use glaze during the last part of cooking (instructions below) to build a glossy, caramelized finish without burning.

Roast or smoke (choose method)

    Smoking method (preferred for BBQ flavor)

    Preheat smoker to a steady 225–250°F (107–121°C). Place the turkey breast-side up or chickens breast-side up on the grate. Add wood chips (apple or hickory) per manufacturer instructions. Cook until internal temperature reaches 160°F (71°C) in the thickest part of the breast and 175–180°F (79–82°C) in the thigh for turkey; for chickens, 165°F (74°C) in the thickest part. Approximate time: chickens 2.5–4 hours depending on size; turkey 6–8+ hours for a 10–12 lb bird. During the last 45–60 minutes baste every 15–20 minutes with the glaze, but stop basting for the last 10 minutes to allow glaze to set.

    Oven roasting method (faster, reliable)

    Preheat oven to 325°F (163°C). Place bird on a roasting rack in a pan. Roast chickens about 20 minutes per pound; turkey about 13–15 minutes per pound, until internal temp reaches the same targets (165°F/74°C at thickest breast for safety — check both breast and thigh). During the final 30–45 minutes, baste every 15–20 minutes with the glaze to build color and flavor. If skin is browning too quickly, tent loosely with foil.

    Use a reliable instant-read thermometer inserted into the thickest part of the breast and thigh without touching bone. Remove from heat a few degrees before target temp; carryover will raise it a bit while resting.

Resting & carving

    Tent and rest

    Transfer the bird(s) to a cutting board, tent loosely with foil, and rest 20–30 minutes (chickens 10–15 minutes) so juices redistribute. While resting, reserve pan juices and any remaining glaze for service.

    Carve

    Carve turkey by removing legs and thighs first, then breasts (slice against the grain). For chickens, remove legs then slice breasts. Spoon warmed reserved glaze/pan juices over slices as you plate to keep meat moist.

Finish & serve

    Arrange carved turkey or chicken on a warmed platter. Sprinkle chopped fresh parsley (0.25 cup) over the meat and garnish with lemon wedges. Serve hot with extra glaze on the side.

    If catering, hold carved meat in a steam table pan over low heat with a small amount of warmed apple juice or pan juices to keep moist; do not keep above 140°F (60°C) for extended periods without proper food-safety equipment.
