    Make the brine

    In a large pot, combine 1 liter of the water with the kosher salt and sugar. Warm gently, stirring until the salt and sugar dissolve. Remove from heat and add the peppercorns, bay leaves, crushed garlic, rosemary sprigs, and halved lemons. Add the remaining cold water to cool the solution.

    Once the brine is at or below room temperature, add ice to bring it near refrigerator-cold (around 4–8°C / 39–46°F). Do not put hot brine directly onto the turkey.

    Submerge the boneless turkey breast in the brine, weight it down if necessary so it is fully covered. Refrigerate and brine for 8–12 hours (overnight). Keep the turkey chilled the entire time.

    After brining, remove the turkey from the brine, discard the brine. Rinse the turkey thoroughly under cold water to remove excess surface salt. Pat very dry with paper towels. Refrigerate uncovered for 1 hour if possible to dry the skin surface (this helps the smoke adhere and the rub to stick).

Turkey & Smoking

    Prepare the smoker and wood

    Preheat your smoker to a steady 225°F (107°C). If using a charcoal or pellet smoker, load hickory wood chips (soaked briefly or used dry per your smoker type) to provide that classic hickory smoke flavor. Maintain consistent heat throughout the smoke.

    Make the dry rub

    In a small bowl mix brown sugar, paprika, garlic powder, onion powder, ground black pepper, kosher salt (for rub), and cayenne. Stir until evenly combined.

    Combine melted butter, chicken stock, Worcestershire sauce, and minced garlic. Using a meat injector, distribute the mixture evenly into the breast—injecting multiple shallow passes across the meat (about 10–12 injections) to disperse 60–80 ml total. Wipe away any excess on the surface and pat dry.

    Oil and apply rub

    Lightly brush the turkey breast all over with olive oil (about 2 tbs) to help the rub adhere. Sprinkle the dry rub evenly across the entire surface, massaging it into the meat so there's a uniform coating.

    Smoke the turkey

    Place the prepared turkey breast on the smoker grate, fat side up if there is a fat cap. Smoke at 225°F (107°C) until the thickest part of the breast reaches 160–162°F (71–72°C) internal temperature. For a 5 lb boneless breast this usually takes 2.5–3.5 hours—monitor with a probe thermometer for accuracy. Add more hickory chips as needed to maintain steady smoke (follow your smoker’s guidelines).

    Apply glaze toward the end

    During the last 20–30 minutes of smoking, prepare the glaze (see Glaze & Sauce section) and brush a thin layer onto the breast every 7–10 minutes. This builds a glossy, slightly sticky finish without burning the sugars.

    Remove the turkey when the internal temp reaches 165°F (74°C) in the thickest part, or when it registers 160–162°F and you plan to tent and rest (it will rise a few degrees during rest).

    Transfer the turkey to a cutting board and tent loosely with foil. Rest for 20–30 minutes to let juices redistribute before slicing thin.

Glaze & Sauce

    Make the honey glaze

    In a small saucepan over low heat, combine honey, Dijon mustard, apple cider vinegar, and 2 tbs melted butter. Warm gently until the butter is incorporated and the glaze is slightly thickened, 2–3 minutes. Do not boil. Keep warm.

    Serve barbecue sauce

    Warm the hickory barbecue sauce (store-bought or homemade) briefly and transfer to a small serving bowl so guests can add extra sauce at the table.

Garnish & Serving

    Slice the turkey

    After the 20–30 minute rest, remove foil and using a sharp slicing knife, cut the turkey breast into very thin slices (about 1/8–1/4 inch / 3–6 mm). Thin slices highlight tenderness and keep the presentation as a mounded platter.

    Build the platter

    Mound the thin slices high on a large serving platter. Lightly brush any remaining glaze over the top for shine. Sprinkle chopped parsley over the turkey and arrange pickled cucumber slices and lemon wedges around the edges.

    Serve immediately with warmed hickory barbecue sauce on the side. Leftovers keep well refrigerated for 3–4 days.
