Wash and dry
Rinse the mixed greens and romaine under cold water. Spin or pat dry thoroughly so the dressing will cling to the leaves (a salad spinner works best).

Prep vegetables
Halve the cherry tomatoes, thinly slice the cucumber, and very thinly slice the red onion. Shred or julienne the carrot if not pre-shredded. Chop the parsley finely.

Assemble base
In a large mixing bowl combine the mixed greens, romaine, halved tomatoes, sliced cucumber, sliced red onion, and shredded carrot. Toss lightly to combine.

Add crunchy and cheese elements
Sprinkle the croutons and shaved Parmesan (or crumbled feta) over the top and toss gently so they distribute evenly through the greens.

Combine ingredients
In a small bowl or jar combine the red wine vinegar, lemon juice, Dijon mustard, honey, and minced garlic.

Portion
Use about 2–3 tablespoons of dressing per serving for a lightly dressed salad. Reserve any extra dressing in the refrigerator for up to 3 days.
