    Equipment and setup

    Chill large serving pans/bowls and smaller topping bowls in the refrigerator for 15–30 minutes before assembly. Gather cutting board, chef's knife, salad spinner, sheet pans, mixing bowls, tongs, serving spoons, labels, and serving utensils.

    Prepare lettuce

    Remove core and outer damaged leaves from heads if using romaine. Rinse lettuce thoroughly in cold water, spin dry in a salad spinner until mostly dry, then chop into 1–1.5 inch bite-size pieces. Transfer chopped lettuce to chilled large serving pans or hotel pans; cover and keep chilled (on ice or in refrigerated holding) until service. Use about 2 cups of chopped lettuce per serving (total ~40 cups for 20 servings).

    Slice onions

    Peel and halve the red onions. Thinly slice across the grain into half-moons and separate into strips. To mellow the bite, place sliced onions in a bowl of ice water for 10 minutes, then drain thoroughly and pat dry. Transfer to a smaller chilled bowl for the salad bar.

    Dice tomatoes

    Core and cut tomatoes into quarters. Remove seeds and excess juices (squeeze or scoop) to prevent the salad from becoming watery, then dice into roughly 1/2-inch pieces. Place diced, drained tomatoes into a chilled container and keep covered on ice or refrigerated until service.

    Shred cheese

    If not using pre-shredded cheese, shred blocks of cheddar on a box grater or with a food processor. Fluff the shredded cheese to avoid clumps and transfer to a chilled bowl or pan. Keep covered and refrigerated until service.

    Cook and crumble bacon

    Preheat oven to 400°F (200°C). Arrange bacon strips in a single layer on a rimmed sheet pan lined with foil or a wire rack placed over a pan. Bake 15–20 minutes until crispy (time depends on thickness). Remove and transfer to paper towels to drain and cool, then crumble or chop into bite-size pieces. Place crumbled bacon in a chilled container for the salad bar. (Alternatively pan-fry in batches and drain on paper towels.)

    Prepare croutons (if making fresh)

    Preheat oven to 375°F (190°C). Cube 6–8 cups of day-old bread into 1/2-inch pieces. Toss with 2 tablespoons olive oil, 1/2 tsp kosher salt, and 1/4 tsp black pepper (optional). Spread in a single layer on a sheet pan and bake 10–12 minutes, tossing once, until golden and crisp. Cool completely, then transfer to a container. If using store-bought croutons, simply portion into the serving container.

    Seasoning and final checks

    Provide salt and freshly ground black pepper at the salad bar; for catering setup, lightly season a small portion of lettuce with a pinch of salt and pepper as a test, but generally leave toppings unsalted so guests can season their own. Keep all topping containers chilled and covered until service.

    Assemble the salad bar

    Arrange the chilled pan of chopped lettuce as the base. Place toppings (onion, tomato, shredded cheese, crumbled bacon, croutons) in separate bowls or hotel pans alongside the lettuce, each with its own serving utensil. Label each item for guest clarity. Keep everything on ice or in refrigerated wells during service. Replenish items from reserve containers as needed to maintain appearance and food safety.

    Storage and holding

    Hold prepared components at 40°F (4°C) or below. Use cooked bacon and freshly made croutons within 24 hours for best texture (bacon may be kept refrigerated up to 3 days if wrapped). Discard any perishable items left at room temperature longer than 2 hours. Keep backups chilled and rotate in as needed.

    Portioning guidance

    For planning: estimate 2 cups chopped lettuce per person and about 1/4 to 1/2 cup per topping per person (adjust to guest preferences). For the quantities listed, expect roughly 20 servings with moderate topping portions.
