Potatoes & base

    Preheat and wash

    Preheat oven to 425°F (220°C). Scrub the russet potatoes under running water and pat dry.

    Season and roast

    Prick each potato several times with a fork. Rub each potato with olive oil and sprinkle evenly with kosher salt and freshly ground black pepper. Place potatoes directly on a wire rack set over a rimmed baking sheet (this allows air circulation) and roast for 60–75 minutes, until skins are crisp and a skewer slides into the center easily. For very large potatoes, roast up to 90 minutes.

    Hold warm

    When potatoes are done, remove from oven. Keep wrapped individually in foil or place in a warm holding tray (140–160°F / 60–71°C) until service. Before serving, slice each potato lengthwise and gently fluff the interior with a fork; add a butter pat into each opening so guests can finish the potato to taste.

    Butter

    Place unsalted butter in a small warm container so guests can add extra butter. Melt a small portion if preferred by the client for easy serving.

Proteins (choose pork, turkey, beef or chicken)

    Pulled pork (slow-cooker/oven method)

    If making pulled pork: season a 6-lb pork shoulder with 1 tbs kosher salt, 1 tbs black pepper, 1 tsp smoked paprika and 1 tsp garlic powder. Cook in a slow cooker on low for 8–10 hours with 1 cup beef or chicken stock, or roast covered at 300°F (150°C) for 5–6 hours until fork-tender. Shred the pork and mix with 2 cups BBQ sauce. Keep warm in a steam table pan or slow cooker set to warm until service.

    Pulled/shredded chicken (quick option)

    For pulled chicken: simmer 4–5 lbs of boneless skinless chicken breasts or thighs in lightly salted water or broth with 1 bay leaf for 20–30 minutes until cooked through, or use 4 rotisserie chickens shredded. Toss with 1–1½ cups BBQ sauce (or leave plain for guests to choose). Keep warm in steam pans.

    Shredded turkey

    For leftover or roast turkey: warm 5 lbs shredded turkey in a saucepan with ½–1 cup turkey stock and ½ cup gravy or light BBQ to keep it moist. Hold in a warm pan for the bar.

    Braised or shredded beef / chili-style beef

    If providing beef: braise a 5-lb chuck roast at 300°F (150°C) for 3–4 hours in beef stock until it pulls apart easily, then shred and season with salt, pepper and a splash of reserved braising liquid. Alternatively, prepare a chili-style beef (brown 3–4 lbs ground beef, add 2 quarts prepared chili or tomato base and simmer). Keep warm in a steam pan.

    Portioning and labeling

    Place each protein option in its own warming pan or chafing dish with a serving utensil. Label each pan clearly (Pork, Turkey, Beef, Chicken) so guests can choose.

Toppings

    Prepare cheese and sour cream

    Shred cheddar if not pre-shredded. Place sour cream and shredded cheese in shallow serving bowls with serving spoons. Keep sour cream chilled (or on ice) if event is outdoors or lasting several hours; bring to room temperature just before serving if preferred.

    Cook and crumble bacon

    Cook 24 slices of bacon until crisp (pan-fry, oven at 400°F/200°C for 15–20 minutes, or bake on a sheet). Drain on paper towels and crumble. Transfer to a bowl and keep at room temperature; if left out for long periods use a small warming tray.

    Prepare chives and green onions

    Wash and thinly slice chives and green onions. Place in small bowls or shakers for guests to sprinkle on their potatoes.

    Blue cheese

    Place blue cheese crumbles in a labeled bowl; keep covered until service to prevent drying out.

    Butter pats

    Place individual butter pats on a chilled plate or in a butter dish so guests can add a measured pat to their potato. Replenish as needed.

Dressings & sauces

    Ranch dressing

    Chill ranch dressing and transfer to a squeeze bottle or bowl with a spoon for easy dispensing. If making homemade ranch, whisk together 2 cups mayonnaise, 1 cup sour cream, 1 cup buttermilk, 2 tsp dried dill, 2 tsp dried parsley, 1 tsp garlic powder, salt and pepper to taste; chill at least 1 hour before service.

    BBQ sauce and extras

    Keep additional BBQ sauce in a ladle bowl or squeeze bottle. Offer smoked paprika and chili flakes nearby so guests can add a sprinkle if they want some heat.

Setup, holding & service

    Arrange the bar

    Set up the bar from left to right: potatoes (with potatoes sliced and butter available), proteins (each in its own warm pan with labels), then toppings and dressings. Provide plates, tongs, long spoons, ladles and serving spoons for accessibility.

    Holding temperatures

    Keep hot items at 140–160°F (60–71°C) in chafing dishes or steam tables. Keep cold toppings (sour cream, blue cheese) on ice or refrigerated until service time to maintain food safety.

    Guest instructions

    Print or place a small sign indicating: 'Choose a protein: pork, turkey, beef or chicken. Top with butter, sour cream, cheese, bacon, chives. Dress with blue cheese or ranch.'

    Portions and replenishing

    Plan approximately 1 large potato per guest and 4–6 oz of protein per guest. Replenish toppings and proteins as needed; keep backup batches warm or chilled in the kitchen.
