    Thaw pastry

    Remove the 2 frozen puff pastry sheets from the freezer and place them on the countertop. Let them thaw until pliable but still cold, about 20–30 minutes depending on room temperature. You want them workable but not warm.

    Preheat the oven to 190°C (375°F). Line a baking sheet with parchment paper.

    Lightly dust your work surface with the 2 tbsp all-purpose flour to prevent sticking. Keep the pastry cold; if it becomes too soft, return it to the refrigerator for 10–15 minutes.

    In a small bowl, beat the 1 large egg with 1 tsp water to make the egg wash. Set aside in the refrigerator until ready to use.

Frangipane

    Cream the butter and sugar

    In a medium bowl, beat the 115 g softened unsalted butter with the 100 g granulated sugar until pale and fluffy, about 2–3 minutes with an electric mixer or 4–5 minutes by hand.

    Add eggs and flavor

    Add the 2 large eggs one at a time, mixing well after each addition so the mixture is smooth. Stir in 1 tsp vanilla extract, 1 tbsp dark rum (if using), and the 0.125 tsp salt.

    Fold in dry ingredients

    Using a spatula, fold in the 100 g almond flour and 15 g all-purpose flour until evenly combined and smooth. Scrape down the bowl and mix briefly to ensure a homogeneous almond cream (frangipane). At this point the frangipane should be spreadable; if it feels too soft, chill for 10–15 minutes to firm slightly.

Assembly & Baking

    Roll and cut pastry

    On the floured surface, unroll or gently roll each thawed pastry sheet to smooth any folds, keeping them roughly the same size. Using a 24–26 cm (9.5–10.5 in) round cutter or a dinner plate as a template, trim each sheet to a clean circle. One circle will be the bottom, the other the top.

    Place bottom crust

    Transfer one pastry circle to the prepared parchment-lined baking sheet. Brush a very thin rim of egg wash (from the chilled mixture) around the edge (about 1 cm) to help the top piece adhere later.

    Add frangipane and fève

    Spoon the prepared frangipane into the center of the bottom pastry circle and spread it evenly, leaving a 2 cm (3/4 in) border all the way around. If using a fève, press it into the frangipane close to the edge but still covered by filling so it won't show when sliced.

    Cover with top crust

    Brush the exposed border of the bottom circle with egg wash. Place the second pastry circle on top of the filling. Gently press the edges together to seal, then crimp the edge with the tines of a fork or by pinching to form a tight seal that will hold the filling during baking.

    Egg wash and decorate

    Brush the entire surface of the top pastry with the remaining egg wash. Using the tip of a sharp knife, very gently score a decorative pattern (e.g., concentric circles, crosshatch, or sun rays) on the top—do not cut through the pastry. Make a small vent (about 1 cm) in the center or a few small slits to allow steam to escape during baking.

    Chill before baking

    Place the assembled galette in the refrigerator for 15–20 minutes to firm up—this helps the layers rise and keeps the edges sealed.

    Bake

    Bake in the preheated 190°C (375°F) oven on the middle rack for 30–40 minutes, until the crust is deeply golden and puffed. If the edges brown too quickly, cover them loosely with foil for the final 10–15 minutes.

    Check doneness by tapping the center: it should sound hollow and the frangipane should feel set (not liquid) when slightly pressed. Remove from oven and transfer to a wire rack.

    While the galette is still warm (but not piping hot), sprinkle 1 tbsp granulated sugar over the top to add a subtle sparkle and slight caramelized crunch. Let the galette cool for at least 20–30 minutes; this also makes slicing easier and prevents the frangipane from oozing.

    Serve warm or at room temperature. Tradition: hide who gets the fève — the finder becomes king/queen and wears a paper crown. Store any leftovers wrapped in foil at room temperature for 1 day or refrigerated for up to 2 days; reheat briefly in a 160°C (325°F) oven to refresh the crust.
