Preheat and prep
Preheat oven to 425°F (220°C). Scrub potatoes well and pat dry. On a rimmed baking sheet, toss potatoes with 2 tbs olive oil, 1/2 tsp of the kosher salt and 1/4 tsp black pepper so they are evenly coated.

Roast
Arrange potatoes spaced apart on the baking sheet and roast in the preheated oven 45–55 minutes, turning once halfway, until skins are crisp and a skewer or fork slides into the center easily. Timing depends on potato size — test for tenderness.

Make potato mash
To the reserved potato flesh, add 2 tbs unsalted butter, a pinch (~1/4 tsp) kosher salt and the remaining 1/4 tsp black pepper. Mash until smooth and creamy. Stir in 1/2 cup shredded cheddar to make a cheesy filling base (reserve remaining cheddar for topping). Taste and adjust seasoning if needed.
BBQ Pulled Pork

Warm and sauced pork
Place a large skillet over medium heat. Add the 3 cups cooked pulled pork, 1 cup barbecue sauce, 1 tsp smoked paprika, 1/2 tsp garlic powder and 1/2 tsp onion powder. Stir to combine and cook 6–8 minutes, breaking up any large clumps, until pork is heated through and sauce is glossy. If sauce becomes too thick, add 1–2 tbs water to loosen.

Taste and adjust
Taste a small piece of pork and adjust seasoning or sauce level as desired — add a pinch more smoked paprika for smokiness or a splash more BBQ sauce for sweetness/tang.

Fill potato shells
Spoon or pipe a generous layer (about 1–2 tbs) of the cheesy mashed potato into each potato shell to form a stable base. Divide the warmed BBQ pulled pork evenly among the 8 potato halves, placing about 3–6 tbs of pork on top of each mashed base.

Top with cheese and melt
Sprinkle the remaining shredded cheddar evenly over all stuffed potatoes. Place the baking sheet back in the oven and bake at 425°F for 5–8 minutes, or broil on high 1–3 minutes until cheese is melted and bubbling and edges begin to brown — watch carefully if broiling to avoid burning.

Finish and garnish
Remove potatoes from oven. Dollop about 1 tsp–1 tbsp sour cream on each potato (depending on preference). Sprinkle chopped green onions, the chopped cilantro (if using), and a few sliced pickled jalapeños over the top. Finish with a light pinch of coarse kosher salt over the sour cream and green onions to brighten flavors.
