Weigh & prepare portion
Weigh out a 6 oz portion of the chosen pre-cooked meat on a scale. Keep the meat cold until ready to heat to minimize moisture loss. Trim any excessive hard fat (leave a thin protective fat layer ~1/8" on brisket or chicken if present).

Cut or pull by protein
Brisket: place flat on cutting board, identify the grain, and slice across the grain into 1/4" thick slices. Pulled pork: use two forks or gloved hands to shred into bite-sized shreds. Smoked chicken: slice meat thinly across the grain (or pull if dark meat). Sausage: slice diagonally into 1/2" slices. Arrange the prepared protein on a shallow, oven-safe tray or in a metal mixing bowl for saucing.

Light seasoning
Sprinkle 1/4 tsp kosher salt and 1/4 tsp freshly ground black pepper evenly over the portion after slicing/pulling. This refreshes the flavor lost in refrigeration and balances the sauce finish.

Recommended heating — low oven (preferred for plates & combos)
Preheat oven to 300°F (150°C). Place the portion on a sheet of aluminum foil on an oven tray. Dot 1 tbs unsalted butter and drizzle 2 tbs (30 ml) mop/basting liquid over the meat to keep it moist. Tent the foil loosely to create a steam pocket. Heat for 8–12 minutes until internal temperature registers ~135–145°F (57–63°C) for best texture (use longer/upper end for denser cuts). Check at 8 minutes to avoid overcooking. Remove from oven and keep tented 1 minute.

Alternate heating — stovetop steaming (fast method)
Bring 120 ml (1/2 cup) of water to a simmer in a medium saucepan. Place a heatproof metal rack or steamer basket above the water (not touching). Put the prepared portion in a heatproof bowl, dot with butter and drizzle mop liquid, cover the bowl tightly with foil or a lid, and place it on the rack. Steam covered for 6–8 minutes until heated through. Remove carefully (steam is hot).

Finish with sauce
Transfer the hot protein to a mixing bowl or plate. Add 2 tbs (30 ml) finishing BBQ sauce and gently toss or brush to coat evenly — brisket and sausage should be lightly sauced, pulled pork may be tossed thoroughly to marry flavors. Taste one piece and add an extra 1/2 tbs sauce only if needed.

Place the sauced portion onto the plate or bread slice provided for the plate/combo. Add 2 pickle slices alongside and sprinkle 1 tsp chopped fresh parsley over the meat for color. Serve immediately so the portion remains hot and saucy. If preparing multiple portions, keep tented in a low oven (200°F / 95°C) for up to 20 minutes; refresh with 1 tsp mop liquid before final saucing if needed.
