Prepare and simmer sauce

Heat 1 tablespoon olive oil in a medium skillet or saucepan over medium heat. Add the finely chopped onion and cook until softened and translucent, about 4–5 minutes. Add the minced garlic and minced jalapeño and cook 30–45 seconds until fragrant. Stir in the chopped tomatoes (or canned crushed tomatoes) and 1 teaspoon tomato paste if using. Add cumin, oregano, 1 teaspoon salt, 1/4 teaspoon black pepper, and 1/2 teaspoon sugar. Pour in 1/4 cup water or stock to loosen the sauce. Bring to a gentle simmer, reduce heat to low, and simmer uncovered for 10–12 minutes, stirring occasionally, until slightly thickened. Taste and adjust seasoning with more salt, pepper, or sugar as needed. If you prefer a smoother sauce, cool slightly and pulse briefly in a blender or use an immersion blender until desired consistency is reached.

Warm/soften or lightly fry tortillas

Heat a large skillet or comal over medium-high heat. Add 2 tablespoons vegetable oil and swirl to coat (or lightly brush each tortilla with oil). Fry each corn tortilla for about 20–30 seconds per side until edges are slightly crisp and tortilla is pliable, or simply warm on a dry skillet for 15–20 seconds per side if avoiding extra oil. Transfer tortillas to a plate lined with paper towels to absorb excess oil. Keep warm in a low oven (about 200°F / 95°C) while finishing other components.

Prep beans and cheese

Warm the refried black beans in a small saucepan over low heat, stirring occasionally until smooth and spreadable, about 5 minutes. If beans are too thick, stir in 1–2 tablespoons water. Portion about 1/4 cup warmed beans onto each tortilla and spread into a thin layer. Sprinkle a little shredded cheddar or Mexican blend over the beans to melt slightly before adding eggs.

Fry eggs to preference

In a nonstick skillet, heat 2 teaspoons butter or oil over medium-low to medium heat. Crack two eggs into the skillet (for two tortillas per batch) and cook sunny-side up until whites are set but yolks remain runny, about 3–4 minutes. For over-easy, cook until whites set then gently flip and cook 20–30 seconds more. Season eggs with about 1/8 teaspoon salt and a pinch of black pepper each while cooking. Repeat for remaining eggs.

Final Assembly & Serving

Place each bean-topped tortilla on a plate. Spoon 1/3 to 1/2 cup of the warm ranchero sauce over the beans on each tortilla, spreading slightly but leaving some edges visible. Top each with a fried egg. Sprinkle each plate with a handful of shredded cheese (if not already added), then crumble a little queso fresco or cotija over the top. Garnish with chopped cilantro and optional avocado slices and pickled red onions. Serve immediately with lime wedges and hot sauce on the side.
