Preheat and prepare
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it. Place a cooling rack nearby.
Mix dry ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and granulated sugar until evenly combined.
Cut in butter
Grate the cold butter or cut into small cubes and work it into the flour mixture using a pastry cutter, two forks, or your fingertips until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining (this creates flaky layers).
Combine wet ingredients
In a separate small bowl or measuring cup, whisk the cold buttermilk and the egg until smooth. Make a well in the center of the dry ingredients and pour in the buttermilk-egg mixture.
Form the dough
Using a wooden spoon or rubber spatula, gently fold the wet and dry ingredients together just until a shaggy, slightly sticky dough forms. Do not overmix — some dry streaks are okay. The dough should hold together but be soft.
Turn out and fold
Turn the dough onto a lightly floured surface. Gently pat it into a rectangle about 1 inch (2.5 cm) thick. Fold the dough over onto itself 2–3 times (this builds layers), then gently press it back to 1-inch thickness. If dough is very sticky, flour your hands lightly.
Cut biscuits
Using a 3-inch round biscuit cutter or a sharp knife, cut rounds from the dough, pressing straight down without twisting to preserve lift. Re-shape and re-roll scraps once or twice to get 6–8 biscuits total depending on cutter size. Place biscuits close together on the prepared baking sheet (sides touching helps them rise taller).

Bake in the preheated oven for 12–16 minutes, rotating the pan halfway through if your oven runs unevenly, until the biscuits are puffed and deep golden brown on top. Baking time will vary by size; larger 'big bad' biscuits may need toward the longer end.
