Cooking Instructions
Prepare the Pork Loin
Slice the pork loin into thin cutlets, about 1/4 inch thick. Use a meat mallet to pound each cutlet to an even thickness for uniform cooking.
Set Up Breading Station
In three separate shallow dishes, place the flour in the first dish, whisk the eggs in the second dish, and combine breadcrumbs, salt, pepper, and paprika in the third dish.
Bread the Cutlets
Coat each pork cutlet in flour, shaking off the excess, then dip into the beaten eggs, and finally coat with the breadcrumb mixture. Press the breadcrumbs onto the cutlet to ensure they adhere.
Fry the Schnitzels
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded cutlets in batches, cooking for about 3-4 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.
Serve
Serve the schnitzel hot with lemon wedges on the side for squeezing over, and enjoy with your favorite beer!
