Preheat the Oven

Preheat your oven to 425°F (220°C).

Prepare the Chicken

Rinse the whole chicken under cold water and pat it dry with paper towels.

Season the Chicken

Rub the chicken with olive oil, then sprinkle salt and black pepper generously inside and out.

Stuff the Chicken

Stuff the cavity of the chicken with crushed garlic cloves, fresh thyme, and half of the lemon (cut into wedges).

Chop the Vegetables

Peel and chop the carrots and potatoes into even-sized pieces. Cut the onion into quarters.

Arrange Vegetables

In a large roasting pan, place the chopped carrots, potatoes, and onion around the chicken.

Roast the Chicken

Place the roasting pan in the preheated oven and roast for 1 hour.

Baste the Chicken

In the last 20 minutes of roasting, mix the chicken broth and melted butter in a bowl. Baste the chicken every 5 minutes for the last 20 minutes.

Check for Doneness

Ensure the chicken is cooked through by checking that the juices run clear when pierced at the thickest part of the thigh (internal temperature should be 165°F or 74°C).

Rest and Serve

Remove the chicken from the oven and let it rest for 10 minutes before carving. Serve with the roasted vegetables.
