Preparing the Filling

Prepare the Escargots

If using canned escargots, rinse them under cold water and drain well. If using fresh escargots, ensure they are cleaned and pre-cooked according to package instructions.

Mix the Filling

In a bowl, combine the escargots, minced garlic, softened butter, chopped parsley, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Assembling the Pastry

Prepare the Puff Pastry

Thaw the puff pastry sheet according to package instructions. Preheat the oven to 200°C (400°F).

Cut the Pastry

On a floured surface, roll out the puff pastry sheet slightly and cut it into squares large enough to wrap around each escargot.

Fill the Pastry

Place a tablespoon of the escargot filling in the center of each puff pastry square. Fold the corners of the pastry over the filling and pinch to seal.

Baking

Egg Wash

Brush the tops of the pastries with the beaten egg to give them a golden finish.

Bake

Place the filled pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until golden brown and flaky.

Remove the escargot en croute from the oven and let them cool slightly before serving. Enjoy warm!
