Method

Prep the wings

Dry and trim

Pat the 1 lb of chicken wings completely dry with paper towels. If the wings are whole, separate drumettes and flats and discard wing tips or save for stock. Trim any excess skin.

Chill for crispness (optional)

Place the dried wings on a rack set over a baking sheet and chill uncovered in the refrigerator for 30–60 minutes to dry the skin further. This step improves crispiness.

Season and coat

In a large bowl, combine the dry seasoning: 1 tablespoon baking powder, 1 teaspoon kosher salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, and 1 teaspoon smoked paprika. Toss the wings in the mixture until evenly coated. The baking powder helps the skin crisp during cooking.

Cook the wings

Preheat the oven to 425°F (220°C). Arrange the coated wings in a single layer on a wire rack set over a rimmed baking sheet (line the sheet with foil for easier cleanup). Bake for 35–45 minutes, turning once at about 20 minutes, until the skin is deeply golden and crisp and an instant-read thermometer inserted into the thickest part reads 165°F (74°C).

Fryer method (faster, extra crispy)

Heat vegetable oil in a deep pot or fryer to 350°F (175°C). Fry wings in batches for 8–10 minutes until cooked through and crisp. Drain on paper towels and proceed to sauce or serve.

Air fryer method (convenient)

Preheat the air fryer to 400°F (200°C). Arrange wings in a single layer without overcrowding and cook for 20–25 minutes, shaking or flipping halfway, until crisp and 165°F (74°C) inside.

Make the sauce (optional)

For classic buffalo-style: In a small saucepan over low heat, melt 2 tablespoons unsalted butter. Add 1/2 cup hot sauce and 1 tablespoon honey, stirring until combined and warm. Remove from heat and whisk in 1 teaspoon soy sauce and 1 teaspoon brown sugar to balance acidity. Keep warm.

If you prefer plain wings, skip this step and serve dry-rubbed.

Toss and finish

Place the hot cooked wings in a clean bowl. Pour the warm sauce over the wings (use all for fully sauced wings or half for lightly sauced) and toss until evenly coated. For extra gloss, return sauced wings to the oven for 2–3 minutes at 425°F (220°C).

Transfer wings to a serving platter. Sprinkle with chopped parsley or cilantro. Serve immediately with lemon wedges and 1/2 cup ranch or blue cheese dressing for dipping.
