Boudin Mixture
Cook aromatics and sausage
Heat 1 tablespoon neutral oil in a large skillet over medium heat. Add the finely diced onion, green bell pepper and celery (the holy trinity) and cook until softened, about 4–5 minutes. Add the minced garlic and cook 30 seconds more. Add the ground pork (or mild sausage meat) and break up with a spoon; cook until browned and no longer pink, about 6–8 minutes.
Season and combine with rice
Stir in salt, black pepper, cayenne, and file powder or smoked paprika if using. Pour in 1/4 cup chicken stock (or water) and simmer 1–2 minutes to deglaze and moisten. Remove from heat and let cool slightly. Fold in the cooked rice and chopped parsley, mixing thoroughly. Taste and adjust seasoning — mixture should be well seasoned because it will be breaded and fried. Chill mixture in refrigerator 20–30 minutes so it firms up for shaping.
Coating & Frying
Shape and coat boudin balls
With chilled mixture, roll portions about 1 1/4 inches in diameter (roughly 1–1.5 tablespoons each) into compact balls using slightly damp hands to prevent sticking. Dredge each ball in flour, shake off excess, dip into beaten egg, then roll in breadcrumbs to coat thoroughly. Place finished balls on a tray and repeat until all mixture is used.
Fry until crisp
Pour vegetable oil into a heavy pot or deep fryer to a depth of about 2–3 inches and heat to 350°F (175°C). Fry the boudin balls in batches, careful not to overcrowd, for 3–4 minutes per batch until golden brown and crisp and the internal temperature reaches 165°F (74°C). Use a slotted spoon to transfer to a wire rack or paper towel-lined tray to drain. Keep warm in a low oven (200°F / 93°C) if needed while finishing remaining batches.
Creamy Remoulade
While boudin balls chill or fry, whisk together mayonnaise, Creole mustard (or Dijon), lemon juice, hot sauce, paprika, Worcestershire sauce, chopped capers (if using), sliced green onion, salt and black pepper in a small bowl until smooth. Taste and adjust acidity or heat. Chill until ready to serve.
Finishing & Serve
Arrange warm boudin balls on a platter. Spoon a small ramelet of creamy remoulade and another of red pepper jelly alongside (or drizzle a little red pepper jelly across the plate). Garnish balls with chopped parsley and serve with lemon wedges. Recommend serving hot so exterior remains crisp and interior is tender and flavorful.
