Hard-boil the eggs

Place 12 large eggs in a single layer in a medium pot and cover with cold water by about 1 inch. Bring to a rolling boil over high heat. Once boiling, cover the pot, remove from heat, and let sit for 10 minutes. After 10 minutes, transfer eggs to an ice bath for at least 10 minutes to stop cooking and make peeling easier.

Peel and halve

Gently tap each cooled egg to crack the shell, then peel under running water. Slice each egg in half lengthwise and remove yolks into a medium mixing bowl. Arrange whites on a tray, keeping hollow sides up.

Make the filling

Mash the egg yolks with a fork until smooth. Add 1 cup mayonnaise, 2 tablespoons Dijon mustard, 1 tablespoon finely minced dill pickle, 1 teaspoon pickle brine, 1/2 teaspoon apple cider vinegar, 1/2 teaspoon hot sauce (optional), 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Stir until very smooth and taste; adjust seasoning with more brine, salt, or hot sauce if desired. Transfer the filling to a piping bag or a resealable bag with a corner snipped for easier filling.

Prepare pickles

If using large pickle slices, halve or quarter them so each fried piece will fit atop an egg half. Pat pickles dry with paper towels to remove excess brine — this helps the coating adhere.

Set up dredging stations

In a shallow bowl whisk together 1/2 cup all-purpose flour and 2 teaspoons cornstarch with a pinch of salt (about 1/4 teaspoon). In a second shallow bowl beat 1 large egg with 2 tablespoons milk or buttermilk. In a third shallow bowl combine 1 cup panko breadcrumbs, 1 teaspoon smoked paprika, and 1/2 teaspoon garlic powder.

Coat the pickles

Working in batches, dredge each dried pickle piece first in the flour mixture (shake off excess), then dip into the egg wash, and finally press into the seasoned panko so pieces are evenly coated. Set coated pickles on a wire rack while you heat the oil.

Heat oil and fry

Pour approximately 1 cup vegetable oil into a 10-inch skillet to a depth of about 1/4 to 1/2 inch and heat over medium-high until shimmering and a breadcrumb dropped in sizzles immediately (about 350°F if using a thermometer). Fry pickles in a single layer, not overcrowding, for 1 to 1.5 minutes per side or until golden brown and crisp. Use tongs to turn. Transfer fried pickles to a paper towel-lined plate or wire rack and season lightly with a pinch of salt while hot. Let cool slightly — they should be warm but not so hot they melt the filling.

Pipe filling into egg whites

Fill each egg white half with the prepared deviled egg filling, making a neat mound that will support a fried pickle on top.

Top with fried pickles

Place one fried pickle piece on top of each filled egg half, pressing gently so it sits securely on the filling. For smaller pickle pieces, you can serve two halves per slice or trim pickles to balance proportionally.

Garnish and serve

Sprinkle chopped fresh chives over the assembled deviled eggs, dust lightly with extra smoked paprika, and optionally top with a small sprig of microgreens or baby dill. Serve immediately while fried pickles are still slightly warm for best texture contrast. If making ahead, store components separately and assemble within 1 hour of serving to keep pickles crisp.
