Prep and caramelize small onion for meatloaf

Heat 1 tablespoon butter in a medium skillet over medium heat. Add the finely diced large onion and a pinch of salt. Cook, stirring occasionally, until soft and beginning to brown, about 8–10 minutes. Add the minced garlic in the last 1 minute; cook until fragrant. Remove from heat and let cool slightly.

Combine meatloaf ingredients

In a large bowl, add ground beef and ground pork. Add the cooled sautéed onion and garlic, shredded gruyere, chopped parsley, egg, breadcrumbs, milk, Worcestershire sauce, Dijon mustard, kosher salt, and black pepper. Mix gently with your hands or a spatula until just combined — avoid overworking to keep the loaf tender.

Shape and bake

Preheat oven to 350°F (175°C). Lightly grease a loaf pan or line a rimmed baking sheet with foil and brush with 1 teaspoon olive oil. Shape the meat mixture into a loaf that fits your pan (about 8x4 or freeform). Place in the prepared pan. Sprinkle the top with the additional 1/2 cup shredded gruyere (reserve a small amount for melting at the end if you like). Bake uncovered for 45–55 minutes, or until internal temperature reaches 160°F (71°C). Tent with foil if the cheese browns too quickly.

Rest the loaf

Remove the meatloaf from the oven and transfer to a cutting board. Let rest for 10 minutes to allow juices to redistribute before slicing. While the loaf rests, prepare the caramelized onion gravy (if not already started).

Caramelize onions

In a wide skillet over medium-low heat, melt 2 tablespoons unsalted butter with 1 tablespoon olive oil. Add the thinly sliced onions and a pinch of salt. Cook slowly, stirring every few minutes, until deep golden brown and soft, about 25–30 minutes. If onions are drying out, add a splash of water. Stir in 1 teaspoon brown sugar about halfway through if you want a deeper caramelization.

Deglaze and make roux

When onions are well caramelized, increase heat to medium and pour in the red wine (if using) to deglaze the pan, scraping up browned bits, about 1–2 minutes until mostly evaporated. Sprinkle 1 tablespoon all-purpose flour over the onions and stir to coat; cook 1–2 minutes to cook the raw flour taste out.

Finish gravy

Slowly pour in 2 cups beef stock while whisking or stirring to combine and avoid lumps. Add 1 teaspoon Worcestershire sauce, 1 teaspoon fresh thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a gentle simmer and cook until slightly reduced and thickened, about 6–8 minutes. Taste and adjust seasoning.

Strain or serve with onions

For a smooth gravy, strain through a fine-mesh sieve into a saucepan and rewarm. For a rustic presentation (recommended for French Onion Meatloaf), leave the caramelized onions in the gravy and spoon over sliced meatloaf.

Finishing / Serve

Assemble and garnish: Slice the rested meatloaf into 6 equal slices (or your desired thickness). Place slices on a platter or individual plates. Spoon generous portions of the warm caramelized onion gravy over each slice. Sprinkle additional shredded gruyere on top if you like and allow it to melt slightly from the heat of the gravy, or place under a broiler for 1–2 minutes to brown (optional). Garnish with chopped fresh parsley.

Serve: Serve immediately with two choice sides (mashed potatoes, roasted vegetables, or a simple green salad). Leftovers keep refrigerated up to 3 days; reheat gently with extra gravy to prevent drying.
