Muddle & Mix

In a cocktail shaker, add the fresh mint leaves and simple syrup. Gently muddle the mint 4–6 times to release aroma — avoid pulverizing. Add the light rum, fresh lime juice and 2 dashes of angostura bitters. Fill the shaker with ice, cap and shake vigorously for 10–12 seconds until well chilled.

Strain

Double-strain the shaken mixture into a highball glass (or pint glass) filled about two-thirds with ice to remove mint fragments.

Draft Pour & Finish

Top with Draft Beer

Slowly pour 6 oz of a light lager draft over the back of a spoon onto the strained cocktail to create a layered effervescence. Pour gently to preserve carbonation and avoid excessive foaming; leave about 1/2 inch head.

Garnish & Serve

Give the drink a gentle stir 2–3 times to marry flavors without flattening the beer. Garnish with a lime wheel on the rim and tuck a sprig of fresh mint into the glass. Serve immediately with a straw or coaster and enjoy during happy hour.
