Cook sausage
If using sausage patties, heat 1 tsp oil in the skillet over medium heat. Add 2 sausage patties and cook 3–4 minutes per side until internal temperature reaches 160°F (71°C). Transfer to a plate and keep warm.
Cook scrapple
If using scrapple, heat 1 tsp oil in the skillet over medium-high. Add 2 slices and cook 3–4 minutes per side until browned and crisp on the edges. Transfer to a plate and keep warm.
Eggs & Cheese
Scrambled eggs (preferred)
In a small bowl whisk together 2 large eggs, 1 tablespoon milk, 1/8 tsp black pepper and 1/8 tsp salt. Melt 1/2 tablespoon butter in a nonstick skillet over medium-low heat. Pour in egg mixture and let sit 10–15 seconds. Gently stir with a silicone spatula, forming soft curds, cooking 1–2 minutes until just set but still moist. Remove from heat. Sprinkle 1 oz shredded sharp cheddar over the eggs while warm so it melts.
Fried egg alternative
For fried eggs, melt 1/2 tablespoon butter in a skillet over medium. Crack each egg and cook 2–3 minutes for sunny-side-up, or flip and cook 30–60 seconds for over-easy. Season with a pinch of salt and pepper. Place cheese on top in the last 30 seconds to allow melting.
Toast or Biscuit
If serving on toast: Toast 2 slices of sandwich bread to desired doneness and spread remaining 1/2 tablespoon butter on one side of each slice. If serving on a biscuit: split 1 buttermilk biscuit and warm in a 350°F (175°C) oven for 5 minutes or in the skillet 1–2 minutes cut-side down until lightly browned.
Assembly & Finish
Choose one protein (bacon, 2 sausage patties, or 2 scrapple slices). Place the warm toast or bottom half of the biscuit on a plate. Top with the selected protein, then mound the cheesy eggs on top. Close with the second slice of toast or the biscuit top if desired.
Season the assembled sandwich with additional black pepper or hot sauce if desired. Serve immediately.
