Prep Wings
If the wings are whole, use kitchen shears to separate drumettes and flats and discard wing tips or save for stock. Pat wings very dry with paper towels—this is essential for crisp skin.
Season the wings evenly with kosher salt and freshly ground black pepper. If time allows, season and refrigerate uncovered for 1 hour to help dry the skin (optional).
Dry Rub (optional)
Mix smoked paprika, garlic powder, onion powder, brown sugar and cayenne in a small bowl. Toss wings with the dry rub until evenly coated if using instead of or in addition to simple salt and pepper.
For Frying or Crisping
Deep-Fry Method (Most crisp)
Pour oil into a deep fryer or large heavy pot to a depth of about 2–3 inches and heat to 350°F (175°C). Pat wings again if needed. Fry wings in batches without crowding for 8–10 minutes until golden brown and internal temperature reaches 165°F (74°C). Remove to a wire rack set over a sheet pan to drain and rest 3 minutes.
Oven Method (Crispy, no frying)
Preheat oven to 425°F (220°C). Toss wings with 1 tsp baking powder (aluminum-free) and a small pinch of salt to help crisp. Arrange wings skin-side up on a wire rack set over a baking sheet lined with foil. Roast for 35–45 minutes, turning once halfway, until skin is deep golden and crisp and internal temp is 165°F (74°C).
Pan-Fry / Shallow Fry Method
Heat 1/4 inch oil in a large skillet over medium-high heat. Fry wings in batches, turning, for 10–12 minutes until crisp and cooked through. Drain on a wire rack or paper towels.
Sauce (Buffalo-style)
While wings cook, make the sauce. In a small saucepan over low heat, melt the unsalted butter. Add the cayenne pepper sauce, honey, apple cider vinegar and Worcestershire sauce. Whisk until smooth and warmed through, about 2–3 minutes. Taste and add a pinch of salt if needed. Keep warm over the lowest heat or transfer to a heatproof bowl.
For sticky-sweet wings: reserve 2 tablespoons of the sauce to toss with finished wings a second time, or stir additional honey to desired sweetness.
Tossing & Finishing
Transfer wings to a serving platter and pass remaining sauce on the side.
To Serve
Serve wings hot with celery and carrot sticks and blue cheese dressing or ranch for dipping.
