Prepare peppers
Rinse 12 jalapeño peppers and pat dry. Wearing gloves if desired, cut each pepper in half lengthwise. Use a small spoon or narrow knife to remove seeds and membranes for medium heat; leave some membranes for more heat. Pat the pepper halves dry with paper towels.
Make filling
In a medium bowl, combine 8 oz softened cream cheese, 1 cup shredded sharp cheddar, 1 tsp garlic powder, 1 tsp onion powder, 3 tsp salt, 1 tsp black pepper, and 2 tbsp finely chopped cilantro (optional). Mix with a spatula until smooth and uniform. Taste and adjust seasoning if needed.
Stuff peppers
Using a small spoon or piping bag, fill each jalapeño half with the cheese mixture, pressing gently so the filling is level with the pepper rim. Place stuffed peppers on a baking sheet lined with parchment and transfer to the refrigerator for 15–20 minutes to firm up the filling (this helps the filling stay in place during breading).

Set up dredging station
Place 1 cup all-purpose flour in a shallow bowl. In a second bowl whisk together 2 whole eggs and 2 tbsp milk until homogenous. In a third shallow bowl mix 1.5 cups panko breadcrumbs, 1 tsp smoked paprika, 0.5 tsp salt, and 0.25 tsp black pepper.
Coat peppers
Working in batches to avoid crowding, dredge each chilled stuffed pepper half first in flour, shaking off excess, then dip into the egg mixture, allowing excess to drip back into the bowl, and finally press into the panko mixture to coat evenly. For an extra-crisp double coat, return coated pepper to the egg and panko a second time. Place breaded peppers on a rack or parchment-lined tray while you heat the oil.
Cook and Serve
Heat oil
Pour 2 cups vegetable oil into a heavy-bottomed skillet or dutch oven to a depth of about 1 to 1.5 inches. Heat oil over medium-high heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of bread into the oil — it should sizzle and brown in about 60 seconds.
Fry poppers
Carefully add breaded jalapeño halves to the hot oil in a single layer without overcrowding (work in batches). Fry for 2.5–3.5 minutes per side, turning once, until golden brown and the filling is hot. Use a slotted spoon or spider to transfer cooked poppers to a wire rack set over a baking sheet or paper towels to drain. If cooking multiple batches, keep finished poppers warm in a 200°F (95°C) oven.
Finish and serve
Let poppers rest 1–2 minutes (filling will be very hot). Serve warm with lime wedges and optional dipping sauces (ranch, spicy mayo, or salsa).
