Prepare the meat

Place the ground beef in a bowl. Add kosher salt, black pepper, and Worcestershire sauce (if using). Using your hands, gently combine the ingredients until just mixed — do not overwork the meat to avoid tough patties.

Form patties

Divide the mixture into 4 equal portions (about 4 oz each). Gently shape each portion into a patty about 3/4-inch thick and slightly wider than the buns. Press a shallow dimple in the center of each patty with your thumb to prevent doming while cooking.

Prepare buns

Split the buns and spread a thin layer of softened butter on the cut sides. Heat a skillet or griddle over medium heat. Toast the buttered cut sides on the skillet until golden brown, about 1–2 minutes. Remove and set aside.

Add cheese (if using)

When patties are nearly finished cooking, place a slice of cheddar on each patty and cover the pan for 30–60 seconds to melt.

Cook the patties

Heat a large skillet or cast-iron pan over medium-high heat and add the neutral oil, swirling to coat. When the pan is very hot, add the patties without crowding. Cook for 3–4 minutes on the first side until a brown crust develops. Flip and cook another 3–4 minutes for medium (adjust time for desired doneness).

Rest patties

Transfer cooked patties to a plate and let rest for 2–3 minutes to redistribute juices.

While patties cook, prepare toppings: rinse and dry lettuce leaves, slice tomato into 1/4-inch rounds, thinly slice half a red onion, and have pickles ready.

Mix mayonnaise, ketchup, and mustard in a small bowl to make a simple burger sauce. Taste and adjust ratios as desired.

Assembly

Spread a layer of the sauce on the bottom bun. Place a lettuce leaf, then the cooked patty (with melted cheese if using). Top with tomato slice, a few onion rings, and pickles. Spread a little sauce on the top bun and close the burger.
