Beef Patties

Form patties

Divide the ground beef into 4 equal portions (about 4 oz each). Gently form each portion into a round patty about 3/4 inch thick and slightly wider than your buns. Avoid overworking the meat — handle just enough to shape. Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.

Season

Season both sides of each patty with kosher salt and freshly ground black pepper. If using, brush or mix 1 tsp Worcestershire sauce into the surface of the patties for extra flavor.

Cook patties

Heat a heavy skillet, cast-iron pan, or griddle over medium-high heat. Add 1 tablespoon neutral oil and swirl to coat. When oil is shimmering and just beginning to smoke, add the patties (work in batches if necessary to avoid crowding). Cook undisturbed for 3-4 minutes until a brown crust forms. Flip and cook another 2-3 minutes for medium (adjust time for desired doneness). During the last minute of cooking, place a slice of cheddar on each patty, cover the pan with a lid for about 30-60 seconds to melt the cheese.

Toast buns

While patties are resting (a few minutes), spread softened butter evenly on the cut sides of the hamburger buns. Place them cut-side down in a clean skillet over medium heat or on the griddle until golden brown and slightly crisp, about 1-2 minutes. Remove and keep warm.

Prepare vegetables

Wash and dry the lettuce leaves. Slice the tomato into 1/4-inch thick rounds. Slice the red onion into thin rings. Arrange lettuce, tomato slices, red onion rings, and pickle slices so they are ready to assemble.

Spread about 1 teaspoon mayonnaise on the bottom half of each toasted bun, 1 teaspoon ketchup on the top or bottom as preferred, and 1 teaspoon mustard. Adjust quantities to taste.

Assemble cheeseburgers

Place a lettuce leaf on the mayo-spread bottom bun (this creates a moisture barrier), then add a cheese-topped beef patty. Top the patty with a tomato slice, 2-3 red onion rings, and 2 pickle slices. Place the top bun with condiments over the stack.

Serve

Serve the cheeseburgers hot. Allow 2-3 minutes of brief resting after assembly if desired so juices settle. Offer extra ketchup, mustard, or pickles on the side.
