Burger Patties

Mix and shape

Place ground beef in a bowl. Add kosher salt, black pepper, Worcestershire sauce, smoked paprika and garlic powder (if using). Gently mix with your hands or a spoon until just combined—do not overwork. Divide mixture into 4 equal portions (about 4 oz each for a 1 lb batch). Shape each portion into a patty about 3/4" thick and slightly wider than your buns. Press a shallow dimple into the center of each patty with your thumb to keep them from puffing while cooking.

Cook patties

Heat a heavy skillet or cast-iron pan over medium-high heat and add the neutral oil. When the pan is hot and shimmering, add the patties leaving space between them. Cook undisturbed for 3-4 minutes until a brown crust forms. Flip and cook 2-3 minutes more for medium (adjust time for desired doneness). In the last 1 minute of cooking, top each patty with a slice of cheddar and cover the pan with a lid or aluminum foil to melt the cheese.

Cook bacon

While patties are resting, cook bacon in a separate skillet over medium heat. Lay bacon strips in a single layer and cook, turning occasionally, until crisp, about 6-8 minutes. Transfer to a paper towel–lined plate to drain. For extra crispness, you can finish on a baking sheet in a 400°F (200°C) oven for 5 minutes.

Toast buns

Split the buns and butter the cut sides with the unsalted butter. Place buttered sides down in a clean skillet over medium heat and toast until golden and fragrant, about 1-2 minutes. Alternatively, toast in a 375°F (190°C) oven for 3-4 minutes.

Assemble sauce

In a small bowl, mix mayonnaise, yellow mustard and ketchup until combined. Taste and adjust seasoning.

Assemble burgers

Spread a tablespoon of the sauce on each bun bottom. Place a lettuce leaf on the sauce, then the cheese-topped patty. Top each patty with 1-2 slices of crispy bacon, tomato slice, red onion rings and 2 pickle slices. Spread a little sauce on the bun top and close the burger. Serve immediately.

Finishing & Serving

Serve burgers hot with optional fries or a side salad. Leftover patties can be refrigerated up to 3 days; reheat gently to preserve juiciness.
