Heat water

Measure 12 oz (about 355 ml) of fresh cold water. Heat to 175–185°F (80–85°C). If you don't have a thermometer, bring water to a gentle simmer and let sit 1 minute to cool slightly.

Prepare tea

Place 1 tablespoon loose green tea into an infuser or use 1 standard tea bag in your cup. If using a teapot, add leaves directly to the pot.

Steep

Pour the hot water over the tea. Steep for 2 to 3 minutes for a balanced cup. For lighter flavor steep 1.5–2 minutes; for stronger but more bitter tea up to 3 minutes. Avoid steeping longer than 3 minutes to prevent astringency.

Finish

Remove the tea bag or strain out the leaves. Taste and, if desired, stir in up to 1 teaspoon honey or sugar. Add a lemon wedge if preferred. Serve immediately.

Measure 16 oz (about 475 ml) of fresh cold water. Heat to 175–185°F (80–85°C). If you don't have a thermometer, bring to a gentle simmer and let sit 1 minute to cool.

Prepare tea

Place 1.5 tablespoons loose green tea into an infuser or use 1–1.5 tea bags in your cup/large mug.

Steep

Pour the hot water over the tea. Steep for 2 to 3 minutes, adjusting toward 3 minutes for fuller flavor but not longer to avoid bitterness.

Finish

Remove the tea bag or strain the leaves. Sweeten with up to 1.5 teaspoons honey or sugar if desired and add a lemon wedge to taste. Serve hot.
