Select size and adjust quantities

Choose either 12 oz or 16 oz finished coffee. The base recipe below is for a 12 fl oz cup using a 1:17 coffee-to-water ratio. For 16 oz, increase coffee to 0.47 oz (approx. 13.3 g) and water to 16 fl oz (approx. 475 ml).

Measure coffee: For 12 fl oz use 0.35 oz (about 10 g) whole beans. If you prefer stronger coffee use up to 0.45 oz (13 g).

Grind: Grind the measured beans to a medium grind (similar to granulated sugar) for a drip coffee maker or slightly coarser for a cone pour-over. Grind immediately before brewing for best flavor.

Prepare water: Use fresh cold water. Heat to about 200°F (93°C). If you don't have a thermometer, bring to a boil and let sit 30 seconds.

Prepare filter and brewer: Place a paper or permanent filter in the basket or cone. If using a paper filter, rinse it with hot water to remove paper taste and preheat the brewer/carafe; discard rinse water.

Add ground coffee to the filter, leveling the bed so water will distribute evenly.

Begin brewing: If using an automatic drip machine, start the brew cycle with the measured water. If using pour-over, bloom first by pouring just enough hot water (about twice the weight of coffee, ~20 g / 20 ml for 10 g coffee) to wet all grounds and wait 30–45 seconds. Then continue pouring slowly in concentric circles until you reach the total water volume (12 fl oz / 355 ml). Total pour time should be about 3 to 4 minutes.

Allow the coffee to finish dripping into the carafe. For automatic brewers, wait until the flow stops; for pour-over, total brew time should be ~3–4 minutes. If brew is faster, try a finer grind; if slower, try coarser.

Once brewing is complete, remove the filter and grounds. Give the carafe a gentle swirl to homogenize the brew.

Optional Additions (per cup)

Taste the coffee black first. Add optional milk/cream and sugar to taste. For the provided guideline, add 1 tbsp milk or cream and 1 tsp sugar and stir until dissolved.

Serve immediately in a preheated mug for best temperature and aroma.

Equipment Care

Discard used grounds and paper filter. Rinse and clean the carafe, filter basket, and any reusable filter after use to prevent stale oils and buildup.

Store remaining whole beans in an airtight container away from light, heat and moisture. Grind only what you need for the best flavor.
