Cold Brew Concentrate
Measure and Grind
Weigh 100 g of Fazenda coffee and grind to a coarse, even texture (similar to coarse sea salt). A consistent coarse grind ensures even extraction and easier filtration.
Combine Coffee and Water
Place the ground coffee into the large jar or pitcher. Pour 1 L of cold filtered water over the grounds, ensuring all grounds are saturated. Gently stir with a spoon for 10β15 seconds to make sure no dry pockets remain.
Steep
Cover the jar and let the mixture steep at room temperature or in the refrigerator for 16 to 20 hours. Room temperature yields a slightly brighter cup; refrigeration yields a cleaner, less acidic profile. Do not agitate during steeping.
Pre-Strain
After steeping, set a fine-mesh sieve lined with cheesecloth or a clean kitchen towel over a bowl or second pitcher. Pour the cold brew slowly through the sieve to separate the bulk of the grounds. Use a spatula to press gently on the grounds in the sieve to extract additional liquid, but avoid forcing fine sediment through.
Fine Filtration
For a clearer concentrate, filter the strained brew a second time through a fresh layer of cheesecloth or a paper coffee filter placed in a fine mesh sieve. This reduces sediment and yields a smoother mouthfeel.
Store
Transfer the cold brew concentrate to a sealed bottle or jar and refrigerate. Concentrate will keep well for up to 10 days, best within 5 days. Label with the brew date.
To Serve
Sweeten (optional)
If desired, stir in 1 tablespoon simple syrup or your preferred sweetener to taste. Simple syrup blends more evenly in cold beverages than granulated sugar.
Notes
Adjust coffee-to-water ratio (by weight) for different strengths: 1:10 (stronger concentrate) to 1:12 (lighter). Use freshly roasted Fazenda beans and cold filtered water for best flavor. Keep concentrate refrigerated and discard after 10 days.
Cleaning
Rinse equipment promptly after use. Compost used grounds or dry them for houseplant fertilizer. Wash sieves, jars, and filters with warm soapy water and allow to air-dry.
