Vanilla Bean Chilly Balls
Prepare custard base
Split the vanilla bean lengthwise and scrape the seeds into a small saucepan. Add the pod, whole milk, and heavy cream. Warm over medium heat until just steaming and tiny bubbles form at the edge, about 5 minutes. Remove from heat and let steep for 15 minutes to infuse vanilla flavor.
Whisk yolks and sugar
While the milk is steeping, whisk the egg yolks and granulated sugar together in a bowl until pale and slightly thickened, about 1–2 minutes.
Temper eggs and cook custard
Remove the vanilla pod from the milk mixture. Slowly stream about 1/3 of the warm milk into the yolk mixture while whisking constantly to temper the eggs. Pour the tempered yolk mixture back into the saucepan with the remaining milk. Cook over low–medium heat, stirring constantly with a wooden spoon or heatproof spatula, until the custard coats the back of the spoon (nape), about 4–6 minutes. Do not boil.
Finish and strain
If using gelatin for extra firmness: sprinkle 1/2 tsp gelatin over 1 tbsp cold water and let bloom 3–5 minutes, then whisk into the hot custard until fully dissolved. Add 1/8 tsp fine sea salt. Strain the custard through a fine-mesh sieve into a clean bowl to remove any cooked bits and the vanilla pod. Cool slightly (5–10 minutes).
Chill and set
Cover the surface directly with plastic wrap to prevent a skin and refrigerate until completely cold, at least 3 hours or up to overnight. For a firmer, scoopable texture, churn briefly in an ice cream machine according to manufacturer instructions (about 15–20 minutes) then freeze 1–2 hours until scoopable. Alternatively, if no churn is used, pour into a shallow container and freeze, stirring every 30 minutes for 2–3 cycles to break up ice crystals until scoopable.
Form chilly vanilla bean balls
When fully chilled and scoopable, use a 2.25 inch (about 45–60 ml) ice cream scoop or a melon baller to form two smooth balls per serving. Work quickly and return formed balls to the freezer on a parchment-lined tray while preparing the white chocolate squirt so they remain firm.
White Chocolate Squirt
Temper / melt the white chocolate
Chop the Callebaut white chocolate finely and place in a heatproof bowl. Warm 2/3 of the chocolate in short bursts in a microwave (15–20 seconds), stirring between bursts, or use a bain-marie and heat gently until it reaches about 110°F (43°C). Remove from heat and add the remaining chocolate, stirring until melted and the temperature drops to about 86–88°F (30–31°C). If you prefer easier handling rather than strict tempering, gently melt all chocolate to 104–108°F (40–42°C) and proceed; it may set with a softer sheen.
Adjust consistency
Stir in 1 tsp neutral oil and, only if needed, 1 tsp heavy cream to achieve a pourable but not runny consistency suitable for 'squirting' or drizzling. The sauce should be thick enough to hold some shape but thin enough to be piped or squirted from a small squeeze bottle.
Transfer to squeeze bottle
Pour the melted white chocolate into a small squeeze bottle or piping bag fitted with a small round tip. Keep warm (over a bowl of warm water or in a low warm place) so it remains fluid while plating. If the chocolate thickens, briefly warm the bottle in hot water and shake before use.
Assembly & Garnish
Place two chilled vanilla bean balls on a cold serving plate or chilled shallow bowl. Working swiftly so the balls do not melt, 'squirt' or drizzle the warm Callebaut white chocolate over each ball in a decorative pattern — a few dashes or a ribbon down the center. Use about 2–3 tablespoons (30–45 ml) of white chocolate total for two balls per serving.
Optional finish: sprinkle a scant teaspoon of cocoa nibs or finely grated white chocolate beside the balls for texture and place 1–2 micro mint leaves for color. Serve immediately so the contrast of cold vanilla balls and warm white chocolate is enjoyed.
