Prepare oven and pans

Preheat the oven to 350°F (175°C). Butter and line the bottom of a 9-inch round cake pan (or individual 6–8 ramekins for single servings) with parchment; lightly butter the parchment. If using a single 9-inch pan, you will get a tender, airy cake with a molten center; ramekins yield individual servings.

Dry ingredients

In a medium bowl, whisk together 1.25 cups all-purpose flour, 0.5 cup unsweetened cocoa powder, 1 tsp baking powder, 0.5 tsp baking soda, and 0.5 tsp fine sea salt until homogenous.

Wet ingredients

In a large bowl, whisk 1 cup granulated sugar and 2 large eggs until combined and slightly ribboning (about 30 seconds). Add 0.25 cup neutral oil, 0.5 cup whole milk, 0.25 cup buttermilk, and 1 tsp vanilla extract; whisk until smooth.

Combine and add hot liquid

Add the dry ingredients to the wet and fold with a spatula until just combined; do not overmix. Pour in 0.5 cup hot brewed coffee (or hot water) and stir until batter is smooth and pourable. The batter should be fairly thin—this promotes a soft, airy crumb and allows the molten layer to form below.

Bake

Pour batter into the prepared pan or divide among prepared ramekins, filling to about 2/3 full. Bake in the preheated oven: for a 9-inch pan, 28–32 minutes (center should be set but still springy and a toothpick will come out with a few moist crumbs); for 6–8 oz ramekins, 12–15 minutes. Remove from oven and allow to rest 5 minutes before assembling with the pudding layer. The cake will be soft and supple, slightly domed.

Make ganache-style pudding

While the cake bakes, place 4 oz finely chopped dark chocolate in a heatproof bowl. In a small saucepan, gently heat 0.5 cup heavy cream with 2 tbsp light brown sugar and 0.125 tsp fine sea salt until it just begins to simmer at the edges (do not boil). Pour the hot cream mixture over the chopped chocolate and let sit 60 seconds to soften. Whisk until glossy and smooth, then whisk in 1 tbsp unsalted butter until incorporated. The result is a pourable, pudding-like molten chocolate—warm, silky, and just soft enough to sink beneath the cake surface.

Temper if needed and rest

If the mixture is too hot, cool for 3–4 minutes until warm but still fluid. Keep warm while cakes finish baking. For individual ramekins, spoon a tablespoon of the molten pudding into the bottom of each ramekin before pouring batter (alternative method).

Assemble molten layer under cake

For the single 9-inch cake method: after the cake has rested 5 minutes out of the oven, pour the warm pudding mixture gently onto the center of the cake; it will sink slightly into the warm crumb over 3–5 minutes, creating a subtle pudding layer underneath the cake surface. For ramekins where pudding was placed first, top with batter and bake as directed; for those, the pudding will remain molten beneath the baked cake.

Finishing & Serving

Portion and chill briefly

If you baked a 9-inch cake, allow it to cool 8–10 minutes so the pudding sets a touch but remains molten beneath. Run a thin knife around the edge and invert onto a plate or serve directly from pan. If using ramekins, let sit 3 minutes, then run a knife and invert each portion onto a warmed dessert plate or serve straight in the ramekin.

Plate with ice cream

Place 1 scoop (about 1 scoop) of vanilla bean ice cream next to or on top of each cake portion — the contrast of warm cake and cold ice cream is essential. For a 9-inch cake portioned into 4, serve 1 scoop per portion (recipe yields 4 servings).

Garnish

Lightly dust with 1 tsp unsweetened cocoa powder and, if desired, 1 tsp powdered sugar for contrast. Add a fresh mint leaf to each plate for color and aroma.

Serve immediately

Serve while the cake is still warm and the pudding is soft and oozing under the cake, alongside cold vanilla bean ice cream so each spoonful rubs against cool creaminess.
