Select 24 large, ripe strawberries that are firm with fresh green tops intact. Avoid overripe or bruised fruit.

Rinse the strawberries under cold running water to remove dirt. Fill a bowl with about 1 cup cold water and gently swish the berries, then drain. Pat each strawberry completely dry with paper towels. Drying is critical—any surface moisture will cause chocolate to seize or not adhere properly.

Prepare a double boiler

Set a heatproof bowl over a saucepan of barely simmering water (water should not touch the bowl). Alternatively, use a microwave (see next step).

Melt chocolate (double boiler method)

Place 12 oz bittersweet or semisweet chocolate chips and 1 tablespoon unsalted butter into the bowl. Stir frequently as the chocolate melts to ensure even heating. When nearly melted, remove the bowl from heat and stir until smooth. If using oil for extra shine, stir in 1 teaspoon vegetable or coconut oil now.

Melt chocolate (microwave method)

If microwaving, place chocolate chips and butter in a microwave-safe bowl. Heat in 20–30 second intervals at 50% power, stirring between each interval, until fully melted and smooth. Stir in 1 teaspoon oil if desired.

Keep the melted chocolate warm and fluid. If it thickens, return briefly to the double boiler or microwave (10–15 seconds).

Hold a strawberry by the stem and dip it into the melted chocolate, swirling to coat about two-thirds to almost the top. Lift and allow excess chocolate to drip back into the bowl, using a small spoon to help if needed. Place the dipped strawberry on a sheet of wax or parchment paper. Repeat with all strawberries.

If you want a thicker coating, allow the first coat to set slightly (about 5 minutes at room temperature), then dip a second time.

Decoration (optional)

For a white chocolate drizzle: melt 2 oz white chocolate chips using the double boiler or microwave method described above. Transfer melted white chocolate to a small piping bag or a resealable plastic bag with a tiny corner snipped, then drizzle over the still-wet dark chocolate-coated strawberries. Work quickly so the drizzle adheres.

For sprinkles or nuts: Immediately after dipping each strawberry, while chocolate is still wet, gently dip or sprinkle the coating with your chosen topping so it adheres.

Let the strawberries set at room temperature until the chocolate is firm, about 30–60 minutes. To speed setting, place the tray of strawberries in the refrigerator for 10–15 minutes, but do not leave them refrigerated for long periods as condensation can form when brought back to room temperature.

Once chocolate is fully set, transfer strawberries to a shallow container lined with fresh parchment paper. Serve the same day for best texture and flavor; chocolate-covered strawberries are best within 24 hours.
