Prepare the Sauce
In a bowl, combine the soy sauce, honey, minced garlic, grated ginger, and cornstarch. Mix well until the cornstarch is fully dissolved.
Cook the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 6-7 minutes per side.
Add the Sauce and Oranges
Pour the sauce over the chicken in the skillet and add the canned mandarin oranges (with juice). Stir to combine and bring to a simmer.
Thicken the Sauce
Allow the mixture to simmer for about 5-7 minutes until the sauce thickens and the chicken is cooked through.
Serve
Garnish with chopped green onions and toasted sesame seeds. Serve hot over rice or noodles.
