Trim and freeze

If using full-size mozzarella sticks, cut each stick in half crosswise to yield 12 shorter sticks. Arrange the sticks in a single layer on a parchment-lined baking sheet, leaving small gaps between each. Freeze uncovered for at least 30 minutes (up to 2 hours) — this firms the cheese and prevents excessive melting during frying.

Breading station setup

Set up three shallow bowls or pie plates: Bowl 1 — 1 cup flour (plus the extra 1/4 cup reserved in a small bowl for dusting). Season the flour lightly with 1/4 tsp salt and a pinch of pepper. Bowl 2 — whisk together the 3 eggs and 3 tablespoons milk until smooth. Bowl 3 — combine 2 cups plain breadcrumbs, 1 cup Italian breadcrumbs (if using), 1/4 cup grated Parmesan, 1 tsp salt, 1 tsp black pepper, 1 tsp garlic powder, 1/2 tsp onion powder and 1/2 tsp dried oregano; mix thoroughly so the seasonings distribute evenly.

Work on a clean tray to hold breaded sticks in a single layer before frying. Have a wire rack ready to drain fried sticks or a baking sheet lined with paper towels.

Breading

Lightly dust each chilled mozzarella stick with the reserved 1/4 cup flour, shaking off excess. This helps the egg adhere.

Dip the floured stick into the egg wash, ensuring all sides are coated. Allow excess egg to drip off for 2–3 seconds.

Press the egg-coated stick into the breadcrumb mixture, rolling and pressing firmly so breadcrumbs adhere and form an even coating. For extra-crisp, double-coat: return the breaded stick to the egg wash, then again to the breadcrumbs, pressing to seal.

Place breaded sticks on the prepared tray and return to the freezer for 15–20 minutes. Chilling again helps the coating set and reduces cheese leakage during cooking.

Frying (traditional)

Pour vegetable oil into a heavy-bottomed skillet or deep frying pan to a depth of about 1 to 1 1/2 inches (roughly 1 cup is usually adequate for a 10–12-inch pan). Heat the oil over medium-high heat to 350°F (175°C). If you don't have a thermometer, test with a small breadcrumb — it should sizzle and brown in about 30–40 seconds.

Working in batches (do not overcrowd), carefully lower 3–4 chilled, breaded mozzarella sticks into the hot oil using tongs. Fry for 1 to 1 1/2 minutes per side, turning once, until the coating is golden brown. Total frying time is short — overly long frying causes cheese to burst out.

Remove with a slotted spoon or tongs and drain on the wire rack or paper towel-lined sheet. If desired, keep warm in a 200°F (95°C) oven for up to 10 minutes while you finish remaining batches.

Baking or air-frying (alternate, lower-oil method)

Preheat oven to 425°F (220°C) or preheat air fryer to 400°F (200°C). Place breaded sticks on a baking sheet lined with parchment and lightly spray them with nonstick cooking spray; for an air fryer, arrange in a single layer without touching and spray lightly.

Bake for 8–10 minutes or air-fry for 6–8 minutes, checking at the lower end of the time. The coating should be golden and crisp. Remove promptly to prevent over-softening; you may finish with a 1–2 minute broil for extra color in the oven, watching carefully.

Serving

Serve hot immediately with warmed marinara sauce for dipping. Provide napkins — the cheese will be very hot inside. Optionally garnish with a sprinkle of extra grated Parmesan and chopped fresh parsley or basil.
