Prepare saffron (optional)

If using saffron, lightly crush the threads and steep them in 1 tablespoon warm milk for 10 minutes to extract color and aroma.

Simmer and reduce milks

In a heavy-bottomed saucepan, combine whole milk, evaporated milk, and cardamom pods. Bring to a gentle simmer over medium-low heat, stirring occasionally to prevent scorching. Reduce heat to low and simmer gently until the mixture reduces by about 25–30% and thickens slightly (about 30–40 minutes). Stir more frequently toward the end.

Finish base sweetness and aromatics

Remove saucepan from heat. Stir in sweetened condensed milk and granulated sugar until fully incorporated. Add saffron-infused milk (if prepared) and vanilla extract (if using). Taste and adjust sweetness — the mixture should be sweeter than regular milk but balanced for frozen dessert. Let the mixture cool to room temperature, then remove and discard cardamom pods.

Prepare mango purée

Peel and dice ripe mangoes. In a blender or food processor, puree the mango flesh until smooth. Stir in lime or lemon juice and the measured sugar (if mangoes are not very sweet). Taste and adjust acidity or sweetness as needed.

Combine mango and kulfi base

Once the milk base has cooled to room temperature, fold in the mango purée thoroughly until fully combined. If you want streaks of concentrated mango, reserve 1/4 cup purée and swirl it in at the end before freezing. Stir in chopped pistachios and chopped almonds, reserving a little for garnish if desired.

Optional Creamier Finish

Whip cream (optional)

For a creamier, softer kulfi texture, lightly whip the cold heavy cream to soft peaks, then gently fold it into the cooled mango-milk mixture along with vanilla extract. Do not overbeat — just enough to incorporate air for a smoother mouthfeel. If you prefer traditional dense kulfi, skip this step.

Freeze & Serve

Pour the final mixture into kulfi molds, popsicle molds, or a shallow metal loaf pan. Tap molds gently to remove air pockets and smooth the tops. Cover tightly with lids or plastic wrap.

Freeze for at least 8 hours or preferably overnight until fully set. If using a loaf pan, freeze until firm (8–10 hours) then unmold and slice into portions.

To unmold, dip the molds briefly in warm water (2–5 seconds) — do not soak — and gently pull to release. Garnish with reserved chopped pistachios/almonds and a few saffron threads if desired. Serve immediately.
