Place a pizza stone or an inverted baking sheet in the oven and preheat to 250°C (480°F) for at least 30 minutes. If using a conventional oven without a stone, preheat to 240°C (465°F). Dust a work surface with the all-purpose flour.
Stretch or roll the pizza dough into a 12-inch round (about 25–30 cm). Transfer to a piece of parchment paper or a lightly floured pizza peel. Brush the outer 1 cm crust lightly with 1 tablespoon olive oil to help browning.

In a small saucepan over medium heat, melt 2 tablespoons unsalted butter. Add the minced garlic and sauté for 30–45 seconds until fragrant but not browned.

Sprinkle 1 teaspoon flour into the butter-garlic and cook 30 seconds while stirring. Gradually whisk in the 3 tablespoons milk and 60 ml heavy cream until smooth. Bring to a gentle simmer, stirring until slightly thickened (1–2 minutes). Remove from heat and stir in 30 g grated Parmesan, 1 teaspoon salt, 1 teaspoon freshly ground black pepper, and 1 teaspoon dried oregano. Taste and adjust seasoning. The sauce should be pourable but coat the back of a spoon. Keep warm.

While the oven preheats, prepare toppings: slice mushrooms, thinly slice the red onion and tomato, chop green onions, and shred or dice the cooked chicken. If chicken is cold, warm it briefly in a skillet with a teaspoon of oil and a pinch of salt so it releases less moisture on the pizza.

Spread an even layer (about 3–4 tablespoons) of the warm white garlic sauce over the dough, leaving a 1–1.5 cm rim for the crust. Sprinkle about half of the 200 g shredded mozzarella over the sauce. Distribute the sliced mushrooms, red onion, tomato slices, and the warmed chicken evenly. Sprinkle the remaining mozzarella on top. Scatter the chopped green onions over the cheese. If using, add 0.5 teaspoon red chili flakes for a mild heat.
Baking & Finishing

Carefully transfer the pizza (on parchment or peel) onto the preheated pizza stone or inverted sheet. Bake at 250°C (480°F) for 8–12 minutes, or until the crust is golden and cheese is bubbling and slightly browned. Rotate the pizza halfway through baking for even color.
