Method

For the Homemade Tortilla Chips

1

Cut the Tortillas

Stack the corn tortillas and cut them into quarters to form triangles.

2

Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

3

Fry the Chips

Working in batches, add the tortilla triangles to the hot oil and fry until golden brown and crispy, about 2-3 minutes. Use a slotted spoon to remove the chips and drain them on paper towels.

4

Season the Chips

Sprinkle the hot chips with salt while they are still warm.

For the Salsa de Mesa

5

Prepare the Vegetables

Chop the ripe tomatoes, onion, jalapeño pepper (remove seeds for less heat), and cilantro into small pieces.

6

Mix the Salsa

In a bowl, combine the chopped tomatoes, onion, cilantro, jalapeño, lime juice, and salt. Mix well until all ingredients are evenly distributed.

7

Let it Rest

Allow the salsa to sit for at least 15 minutes at room temperature to let the flavors meld together.
