Method

Marinade Preparation

1

Mix the Marinade

In a bowl, combine bourbon, Modelo Negra, soy sauce, minced garlic, black pepper, and salt. Stir well to combine.

2

Marinate the Steak

Place the hanger steak in a resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 2 hours or overnight for best results.

Chipotle Quemado Salsa Preparation

3

Prepare the Salsa

In a blender, combine chipotle peppers, diced tomatoes, onion, minced garlic, lime juice, cilantro, and salt. Blend until smooth and adjust seasoning to taste.

Cooking the Steak

4

Grill the Steak

Preheat the grill to high heat. Remove the hanger steak from the marinade and discard the marinade. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness.

Preparing Toppings

5

Cook the Plantains

In a skillet, heat olive oil over medium heat. Add sliced plantains and cook until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

6

Prepare the Nopales

Grill or sauté the nopales in a bit of olive oil until tender and slightly charred, about 4-5 minutes.

Serving

7

Assemble the Dish

Slice the grilled hanger steak and place it on a serving platter. Top with chipotle quemado salsa, shredded queso Chihuahua, grilled nopales, and fried plantains. Serve immediately.
