Prepare the Swiss Chard

Wash the Swiss chard thoroughly, then chop it finely. In a skillet, sauté the Swiss chard in a bit of olive oil until wilted. Allow to cool slightly.

Make the Gnudi Mixture

In a bowl, combine the sautéed Swiss chard, ricotta cheese, grated Parmesan, flour, salt, and black pepper. Mix until well combined. The mixture should be soft but hold its shape.

Shape the Gnudi

Using floured hands, form the mixture into small dumplings (about the size of a golf ball). Place them on a floured baking sheet.

Cook the Gnudi

Bring a large pot of salted water to a boil. Gently drop the gnudi into the boiling water, cooking for about 3-4 minutes until they float to the surface. Remove with a slotted spoon and drain.

Prepare the Sauce

In a skillet, heat olive oil over medium heat. Add the chanterelle mushrooms and sauté until golden. Add the sweet corn and cherry tomatoes, cooking until heated through.

Serve

Plate the gnudi and top with the sautéed corn, mushrooms, and tomatoes. Finish with a sprinkle of Pecorino Romano cheese.
