Prepare the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and place on paper towels to drain excess fat. Once cooled, chop into small pieces.

Sauté the Scallions

In the same skillet, use a tablespoon of the rendered bacon fat (or olive oil) to sauté the chopped scallions for about 2-3 minutes until tender. Set aside.

Cook the Scallops

In the skillet, add olive oil and heat over medium-high heat. Season scallops with salt and black pepper. Sear scallops for 2-3 minutes on each side until golden brown and cooked through. Do not overcrowd the pan; cook in batches if necessary.

Plate the Dish

On each plate, spoon a generous serving of mashed potatoes, top with the seared scallops, sprinkle with sautéed scallions, lime zest, and the crispy bacon pieces.
