Prepare the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the chopped kataifi pastry with melted butter. Press the mixture into the bottom of a springform pan to form an even layer. Bake for 10-12 minutes or until golden brown. Remove from the oven and let it cool.
Make the Cheesecake Filling
In a large bowl, mix labneh cheese, granulated sugar, honey, and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition.
Add Pistachios
Fold in the chopped pistachios into the cheese mixture.
Bake the Cheesecake
Pour the cheesecake mixture over the cooled kataifi crust. Bake for 35-40 minutes or until set. The center should still be slightly jiggly. Turn off the oven and let it cool inside for 1 hour.
Prepare the Topping
In a small saucepan, combine chopped plums, blackberries, honey, and rose water. Cook over medium heat for about 5-7 minutes until the fruits are soft and syrupy. Remove from heat and allow to cool.
Assemble the Cheesecake
Once the cheesecake has cooled, pour the fruit topping over the cheesecake and spread it evenly. Chill in the refrigerator for at least 4 hours or overnight before serving.
