Prepare salad base

    Wash and dry

    Rinse the mixed salad greens thoroughly under cold water. Spin or pat dry until leaves are mostly moisture-free to help the dressing cling. Place greens in a large serving bowl.

    Add the sliced cucumber, halved cherry tomatoes, thinly sliced red onion, and chopped fresh herbs to the bowl with the greens. Toss gently to combine.

Make dressing

    In a small bowl or jar, combine the lemon juice, Dijon mustard, honey (or maple), minced garlic, sea salt, and black pepper.

    Whisk while slowly streaming in the extra-virgin olive oil until the dressing emulsifies and thickens slightly. Taste and adjust seasoning: add a pinch more salt, a squeeze more lemon, or a dash more honey as needed.

Assemble and serve

    Just before serving, drizzle about two-thirds of the dressing over the salad (reserve the remainder in case extra is desired). Use salad tongs to toss gently but thoroughly so every leaf is lightly coated.

    Sprinkle optional toasted nuts or seeds and crumbled cheese evenly over the top if using. Finish with a quick grind of black pepper.

    Serve immediately. Leftover dressing keeps in a sealed jar in the refrigerator for up to 5 days; toss greens again before serving if refrigerated.
