Add cornmeal slowly
Once the liquid is simmering, reduce heat to low. Slowly pour the cornmeal into the simmering liquid in a thin, steady stream while whisking constantly to prevent lumps.

Cook gently
After all the cornmeal is incorporated, switch to a wooden spoon and cook the polenta over low heat, stirring frequently (every 1โ2 minutes) to prevent sticking. Maintain a gentle simmer; the mixture should thicken. Cook for 20โ30 minutes for coarse polenta (or 10โ15 minutes for finer grinds), until the grains are tender and the texture is creamy. If the polenta becomes too thick, add up to 1/2 cup additional hot water or milk, a few tablespoons at a time.

Season and enrich
When the cornmeal is tender and the polenta is creamy, remove the pan from the heat. Stir in 3 tablespoons unsalted butter until melted and fully incorporated. Add 1 cup freshly grated Parmesan cheese and the remaining 1/2 teaspoon kosher salt. Stir vigorously until the cheese is melted and the mixture is smooth.

Adjust seasoning with 1/2 teaspoon freshly ground black pepper and more salt to taste if needed. Stir in 1 tablespoon extra-virgin olive oil for shine and silkiness.
