Combine sugar and water
In a small saucepan combine 1 cup granulated sugar and 1 cup water. If using, add 1 tablespoon lemon zest for extra lemon aroma.

Cool and strain
Remove from heat. If you added lemon zest, let the mixture steep for 10 minutes off heat, then strain out zest. Allow the simple syrup to cool to room temperature (about 20–30 minutes). You can refrigerate to speed cooling; it will keep in the refrigerator up to 2 weeks.

Juice the lemons
Roll whole lemons on the counter with the palm of your hand to soften, then cut in half and juice until you have 1 cup of fresh lemon juice (about 4–6 medium lemons depending on size). Strain the juice through a fine mesh sieve into a measuring cup to remove seeds and excess pulp if you prefer a clear lemonade.

Combine ingredients
In a 2-quart pitcher, pour the 1 cup fresh lemon juice and 1 cup cooled simple syrup. Add 3 cups cold water and stir thoroughly. Taste and adjust: add more water if too strong, or add up to 2 tablespoons extra simple syrup if you prefer sweeter lemonade.

Make-ahead and storage
Store leftover lemonade in a covered pitcher or bottle in the refrigerator up to 3–4 days. Stir or shake before serving, as separation may occur. Keep extra simple syrup refrigerated separately if making larger batches.
