Prepare ginger
Peel about 2–3 inches of fresh ginger and finely grate it until you have roughly 1/2 cup packed grated ginger. Press the grated ginger lightly in a measuring cup to pack it.

Make syrup
Combine 3/4 cup water and 3/4 cup granulated sugar in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture comes to a gentle simmer.

Infuse ginger
Add the grated ginger and optional lemon zest to the simmering sugar water. Reduce heat to low and simmer gently for 8–10 minutes, stirring occasionally, until fragrant and slightly thickened.

Finish syrup
Remove the saucepan from heat. Stir in 1 tablespoon fresh lemon juice. Let the mixture steep and cool for another 15–20 minutes so the ginger flavor infuses further.

Strain syrup
Strain the cooled mixture through a fine-mesh sieve or cheesecloth into a bowl or jar, pressing on solids to extract as much liquid as possible. Discard solids. Transfer syrup to a clean jar. Yields about 3/4 cup syrup. Refrigerate until cold; syrup will keep 2 weeks refrigerated.

Combine ingredients
In a pitcher or individual glasses, add 3 tablespoons (about 3/8 oz; 0.75 cup total for 4 cups soda) of chilled ginger syrup per 1 cup of club soda. For the recipe quantities given (4 cups soda), add 3/4 cup ginger syrup to the chilled 4 cups of club soda. Stir gently to combine, taking care not to flatten the carbonation.

Serve
Fill serving glasses with ice (about 1/2 cup ice per glass). Pour the prepared ginger ale over the ice. Garnish each glass with a lime or lemon wedge and a sprig of mint if using.
