Prepare Glass & Ice

    Chill glass and add ice

    Chill a tall glass in the freezer for 5–10 minutes if time allows. Fill the glass with ice (about 1 cup) to keep the drink cold and bubbly.

Build the Soda

    Add syrups

    If using vanilla syrup, pour 2 tablespoons into the chilled, ice-filled glass. If using vanilla extract instead, add 1 teaspoon vanilla extract and 1 teaspoon simple syrup to help it dissolve and sweeten.

    Add carbonated water

    Slowly pour 2 cups (about 480 ml) of cold carbonated water over the back of a spoon into the glass to preserve bubbles and gently mix with the syrup. Pouring slowly reduces foam overflow.

    Adjust sweetness

    Taste the soda. If you want it sweeter, stir in up to 1 teaspoon simple syrup and mix gently.

Finish with Cream & Garnish

    Float the cream

    Gently pour 2 tablespoons heavy cream (or half-and-half) over the back of a spoon so it floats on top of the soda, creating the classic creamy layer. Alternatively, for a slightly frothier top, whisk the cream briefly (10–15 seconds) to loosen it before pouring.

    Garnish and serve

    Optionally grate a little nutmeg (about 1/4 teaspoon) or add a lemon twist over the top and drop in a maraschino cherry. Serve immediately with a straw and a long spoon so the drinker can stir the cream into the soda as desired.
