    Cook cherries

    Combine the pitted cherries, granulated sugar, and 1/2 cup water in a small saucepan over medium heat.

    Simmer

    Bring to a gentle simmer, stirring occasionally to dissolve the sugar. Reduce heat to low and simmer for 8–10 minutes, until the cherries have broken down and the liquid is syrupy.

    Mash and strain

    Remove from heat. Use a fork or potato masher to mash the cooked cherries to release more juice. Pour the mixture through a fine-mesh sieve into a bowl, pressing on solids to extract as much syrup as possible. Discard or reserve the solids for another use.

    Finish syrup

    Stir in the lemon juice and vanilla extract into the hot syrup. Taste and adjust: add a pinch more sugar if you want it sweeter, or a few drops more lemon if it’s too sweet. Let the syrup cool to room temperature, then refrigerate until chilled (about 30–60 minutes). Syrup will keep refrigerated in a sealed container for up to 2 weeks.

Assemble Drink

    Fill a highball glass with ice cubes (about 1 cup).

    Measure 2 tablespoons of the chilled homemade cherry syrup and pour it over the ice. If you prefer a stronger cherry flavor, use 1–1.5 tablespoons extra.

    Pour 12 oz of chilled cola slowly into the glass over the back of a spoon or down the side to minimize foam and maintain carbonation.

    Gently stir once or twice to combine syrup and cola without flattening the soda.

    Garnish with a maraschino cherry and a lime or lemon wedge on the rim (optional). Serve immediately.
