Preheat oven to 425°F (220°C). Wash and peel potatoes if desired. Cut potatoes into 1/3–1/2-inch sticks for classic fries. Place cut fries in a large bowl of cold water and soak 20–30 minutes to remove excess starch.

Drain and thoroughly pat the fries dry with a clean kitchen towel or paper towels. In a large bowl, toss the dried fries with 1 tsp cornstarch until lightly coated. Add 2 tbs vegetable oil, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, 1 tsp kosher salt, and 1/4 tsp pepper. Toss to coat evenly.

Spread fries in a single layer on a rimmed baking sheet lined with parchment paper or a lightly oiled sheet. Bake at 425°F (220°C) for 20 minutes, then remove the sheet, flip fries and rotate the pan. Continue baking another 12–18 minutes until golden and crisp at the edges. For extra crispness, broil 1–2 minutes watching carefully.

Place 1 lb ground beef in a bowl. Add 1 tsp kosher salt, 1/2 tsp freshly ground black pepper, and 1 tbs Worcestershire sauce. Gently mix with your hands until combined—do not overwork. Divide into four equal portions and shape into patties about 3/4-inch thick with a slight dimple in the center to prevent bulging.

Heat a large skillet or griddle over medium-high heat and add 1 tsp vegetable oil to coat. When the pan is hot and shimmering, place patties on the surface. Cook undisturbed 3–4 minutes until a brown crust forms. Flip and cook 3–4 minutes more for medium doneness. Top each patty with a slice of cheddar in the last minute and cover loosely to melt.

Spread 1 tablespoon mayonnaise on each bottom bun (approximately half of the 1/4 cup). Spread ketchup and mustard on the top buns (use remaining mayo as desired). Place lettuce on each bottom bun, add a rested cheeseburger patty, top with tomato slice, 2 pickle slices, and a few rings of red onion. Close with the top bun.
