Method

Burger (makes 4 burgers)

    Prepare patties

    Place ground turkey in a bowl. Add 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder and 1/2 tsp onion powder. Gently mix with your hands or a spoon until just combined — do not overwork the meat. Divide into 4 equal portions (about 4 oz each) and shape into patties roughly the diameter of the buns, making a slight indentation in the center of each to reduce domeing during cooking.

    Preheat pan

    Heat a large skillet or griddle over medium-high heat. Add 1 tablespoon neutral oil and let it heat until shimmering (about 1 minute).

    Cook patties

    Place the turkey patties in the hot skillet without crowding. Cook 4–5 minutes on the first side until well browned. Flip and cook 4–5 minutes on the second side, or until an instant-read thermometer inserted into the center reads 165°F (74°C).

    Add cheese (if desired)

    If making the cheddar-topped version, place a cheddar slice on each patty about 1 minute before removing from the pan. Cover the pan with a lid or tent with foil to help the cheese melt.

    Toast buns

    While patties finish, melt 1 tablespoon butter in another skillet over medium heat, or use the same pan after removing patties. Split the hamburger buns and toast cut sides down in the butter until golden, about 1–2 minutes.

    Assemble

    Place each cooked patty on a toasted bun bottom. For cheddar version: top with melted cheddar. For plain-with-ranch: leave patty plain and spread ranch on the bun top. For honey-mustard plain: leave patty plain and spread honey mustard on the bun top. Add optional lettuce, tomato and onion as desired. Close buns and serve immediately.

French Fries (oven-style)

    Preheat and prep potatoes

    Preheat oven to 425°F (220°C). Wash and peel the potatoes if you prefer (peeling optional). Cut potatoes into 1/4–1/2-inch sticks for classic fries; keep sizes as even as possible for uniform cooking. Place cut fries in a large bowl of cold water and soak 20 minutes to remove excess starch (this helps them crisp).

    Dry and season

    Drain the soaked potatoes and pat very dry with clean kitchen towels or paper towels. Toss the dry fries with 2 tablespoons olive oil, 1 tsp salt, 1/2 tsp black pepper and 1/2 tsp paprika (if using) until evenly coated.

    Bake

    Spread the fries in a single layer on a rimmed baking sheet lined with parchment or lightly oiled. Bake in the preheated oven 20 minutes, then flip or shake the pan and continue baking 10–15 minutes more until edges are golden brown and crisp. Total bake time ~30–35 minutes depending on thickness. For extra crispness, switch oven to broil for 1–2 minutes at the end while watching closely.

    Finish and serve

    Remove fries from oven, season with a pinch more salt to taste, and serve hot alongside the burgers with extra ranch or ketchup as desired.
