After resting, rinse each slice under cold water to remove excess salt and blot thoroughly with paper towels to dry.

Place the flour in a shallow bowl. In a second bowl, whisk the 2 eggs with 1 tablespoon milk until combined. In a third bowl, combine panko breadcrumbs, 1/2 cup grated Parmesan, 1 teaspoon dried oregano, and 1/2 teaspoon black pepper.

Bread the eggplant
Working in batches, dredge each eggplant slice in flour (shake off excess), dip into the egg mixture, letting excess drip off, then press into the panko mixture until well coated. Place breaded slices on a tray and let rest for 10 minutes to help the coating adhere.

Adjust heat as needed to prevent burning. Transfer cooked cutlets to a paper towel-lined plate and keep warm in a low oven (200°F/95°C) while you finish the rest.

In a small saucepan over low heat, melt 2 tablespoons unsalted butter. Whisk in 1/2 cup hot sauce until smooth. Add 1 teaspoon apple cider vinegar, 1 teaspoon honey (or maple syrup), 1/2 teaspoon Worcestershire sauce, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Stir and warm gently for 1–2 minutes until fully combined and slightly glossy. Remove from heat.

Toss cutlets in sauce: place warm eggplant cutlets in a wide shallow bowl or sheet pan, pour the warm buffalo sauce over them, and gently toss or brush to coat each cutlet evenly. Work quickly so the coating remains crisp but becomes well coated with sauce.
